Ingredients Mutton Marination

  • मटण / मटन / Mutton- 500 gm
  • मीठ / नमक / Salt – (1 tbsp)as per taste
  • हळद / हल्दी / Turmeric – 1 tsp
  • ितखट / मिर्च पाउडर / Chili powder – 1 tsp
  • दही / Curd – 1/4 cup

Mutton Marination

  1. Wash and clean mutton, and transfer to bowl
  2. Add salt to taste, turmeric, chili powder, curd, mix well
  3. Cover and marinate for 1 hour

Ingredients Masala Paste

  • मीरे / काली मिर्च / Black peppers – 1/4 tsp
  • मोठी इलायची / मोटी इलायची / Black Cardamom – 1
  • वेलदोडा / इलायची / Cardamom – 2
  • लवंग / लौंग / Clove – 4-5
  • गदा / गदा / Mace – 2-3
  • दालिचनी / दालचीनी / Cinnamon – 1 inch
  • लाल िमरची / लाल सूखी मिर्च / Red dry chili – 2
  • काजू / Cashew – 12
  • लसुन / लेहसुन / Garlic – 4
  • अद्रक / अदरक / Ginger – 1 inch
  • खोब्र / नािरयल / Dry Coconut (grated)- 2 tbsp

Masala Paste

  1. Heat a pan on medium,
  2. Add black pepper, black cardamom, cardamom, cloves, mace, cinnamon, red chili, cashew, garlic, ginger saute till light golden
  3. Add dry coconut, saute till light golden, let it cool down
  4. Once cooled, grind everything together to fine paste
  5. Masala is ready, Set aside

Ingredients Andhra Style Mutton

  • तेल / Oil – 1/4 cup
  • िजरे / जीरा / Cumin seeds – 1 tsp
  • तमालपत्र / तेज़पत्ता / Bayleaf – 2
  • लाल िमरची / लाल सूखी मिर्च / Red dry chili – 2-3
  • कांदा / प्याज / Onion – 2
  • टमाटा / टमाटर / Tomato – 1
  • धणे पूड / धनिया पाउडर / Coriander powder- 2 tsp
  • ितखट / मिर्च पाउडर / Kashmiri Chili powder – 1 tsp
  • कोथंबीर / हरा धनिया / Coriander leaves

Andhra style Mutton

  1. In pot, heat oil on medium
  2. Add cumin seeds, sauce for 30 sec
  3. Add bayleaf, dry red chili saute for 30 sec
  4. Add onion, saute till onion softens
  5. Add marinated mutton, mix well, cover and cook for 4-5 min
  6. Add tomato, mix well, cover and cook for 4-5 min
  7. Add Coriander powder, Kashmiri chili powder for color, mix well, cover and cook for 4-5 min
  8. Add water, mix, cover and cook till mutton softens,
  9. Garnish with with coriander,
  10. Ready to serve!

Tips

  1. Cooking time changes as per desired softeness to mutton
  2. Grind masala fine to get thick consistency
  3. Adjust water to desired consistency
  4. Serve with Roti, Naan, Chapati, Rice
