Ingredients

  • साबुदाणा / साबूदाना / Tapioca – 1/2 cup
  • दूध / Milk – 1 ltr
  • बदाम / बादाम / Almond sliced – 2 tbsp
  • साखर / शक्कर / Sugar – 1/3 cup
  • वेलदोडा / इलायची / Cardamom – 1/2 tsp
  • केशर / केसर / Kesar – a pinch

Instructions

  1. Wash and clean sabudana, then soak in water for 30 min
  2. Now heat a pan, add a splash of cold water
  3. Add milk, then bring to boil
  4. Cook till milk reduces to half, stir in between to avoid sticking at bottom
  5. Add soaked sabudana, mix well, cook till sabudana turns transparent
  6. Add slices almonds, cook for 2-3 min more
  7. Add sugar, cardamom powder, mix well
  8. Add a pinch of kesar, mix well, this will give kheer a nice rich color
  9. Kheer is ready, transfer to bowl, garnish with chopped nuts, kesar, rose petal
  10. If you would like, refrigerate for 2-3 hour before service,

Tips

  1. Soaking sabudana for 30 min reduces cooking time
  2. You can add crumbled koya for richness
  3. Refrigerate 2 hours before serving
  4. Serve chilled
