Ingredients
- साबुदाणा / साबूदाना / Tapioca – 1/2 cup
- दूध / Milk – 1 ltr
- बदाम / बादाम / Almond sliced – 2 tbsp
- साखर / शक्कर / Sugar – 1/3 cup
- वेलदोडा / इलायची / Cardamom – 1/2 tsp
- केशर / केसर / Kesar – a pinch
Instructions
- Wash and clean sabudana, then soak in water for 30 min
- Now heat a pan, add a splash of cold water
- Add milk, then bring to boil
- Cook till milk reduces to half, stir in between to avoid sticking at bottom
- Add soaked sabudana, mix well, cook till sabudana turns transparent
- Add slices almonds, cook for 2-3 min more
- Add sugar, cardamom powder, mix well
- Add a pinch of kesar, mix well, this will give kheer a nice rich color
- Kheer is ready, transfer to bowl, garnish with chopped nuts, kesar, rose petal
- If you would like, refrigerate for 2-3 hour before service,
Tips
- Soaking sabudana for 30 min reduces cooking time
- You can add crumbled koya for richness
- Refrigerate 2 hours before serving
- Serve chilled
