Ingredients
- मैदा / White flour -2 cups
- मीठ / नमक / Salt – a pinch
- बेिकंग पावडर / Baking powder – 1 tsp
- तूप / घी / Ghee – 1/4 cup
- साखर / शक्कर / Sugar – 2 cups
- पाणी / पानी / Water – 1 cup
- वेलदोडा / इलायची / Cardamom powder – 1/2 tsp
- Red color – a pinch
- िलम्बू / नींबू / Lime juice – 1/2 tsp
- Oil for frying
Instructions
- In bowl take while four, add salt, baking powder, mix well
- Add ghee mix well
- Add little water a time and make medium soft dough, cover and set aside for 20-30 min
- Now a pan, add sugar, add water, mix well to dissolve sugar completely
- Cook till mixture turns single string consistency, turn off heat
- Add cardamom powder, and a pinch red color, mix well
- Add lime juice, mix well, set aside the syrup
- Divide dough in lemon side pieces, roll the piece round, make a hole, repeat for remaining pieces.
- Heat oil on low heat, drop. Balushahi to oil, fry till golden, turn occasionally.
- Drop fried Balushahi to sugar syrup, soak for 2-3 min on each side
- Strain Balushahi from sugar syrup, and let it cool down
- Garnish with chopped nuts and silver varak
- Enjoy yummy Balushahi
Tips
- Fry on low heat to get it done from inside
- Adding lemon juice to syrup avoids sugar crystalisation
- Store in cool dry container for 2-3 days
- Garnish with nuts before serving
