Dal Bati Recipe

Ingredients – Bati

  • गहु पीठ / गेहू आटा / Wheat flour – 2 cup
  • रवा / सुजी / Semolina flour – 1/4 cup
  • मीठ / नमक / Salt – per taste
  • बेिकंग सोडा / Baking Soda – 1/4 tsp
  • ओवा / अजवाइन / Ajwain – 1/4 tsp
  • बडीशेप / सौंफ / Fennel seed powder – 1/2 tsp
  • तूप / घी / Ghee – 1/4 cup

Cooking – Bati

  1. take mixing bowl, add wheat flour, semolina, salt to taste, baking sada, mix well
  2. Rub ajwain in your palms, add to bowl, add fennel seed powder, mix well
  3. Add 1/4 cup ghee, rub well with flour for 3-4 min
  4. Now add little water and kneed medium dough
  5. Cover and set aside for min 30 min
  6. After 30 min, make small lemon size portion
  7. Take portion, fold and collect to make small rounds
  8. Heat a pan, add a 1 tbsp ghee, add bati balls to pan, cover and bake
  9. Repeat to bake all sides till golden
  10. Crispy, khasta bati is ready
  11. Dip bati in ghee just before serving

Ingredients – Dal

  • चणा डाळ / चणा दाल / Cheakpea lentils – 2 tbsp
  • तूर डाळ / तुवर दाल / Pigeon pea (Toor daal)- 3 tbsp
  • उळीद डाळ / उरद डाल / Black Gram (Urad Dal)- 3 tbsp
  • मुग डाळ / मुंग दाल / Green Gram (Mung Dal)- 3 tbsp
  • मसूर डाळ / मसूर दाल / Pink lentil (Masoor Dal)- 3 tbsp
  • तूप / घी / Ghee – 2 tbsp
  • मोहरी / राई / Mustard seeds – 1 tsp
  • िजरे / जीरा / Cumin seeds – 1 tsp
  • िहरवी िमरची / हरी िमर्च / Green Chili (chopped)- 4-5
  • हींग / Asafoetida – 1/4 tsp
  • लसुन / लेहसुन / Garlic (chopped)- 4-5
  • अद्रक / अदरक / Ginger (chopped) – 1 tsp
  • कांदा / प्याज / Onion (chopped) – 1
  • हळद / हल्दी / Turmeric – 1 tsp
  • ितखट / लाल िमर्च / Chili powder – 2 tsp
  • टमाटा / टमाटर / Tomato (chopped) – 1
  • मीठ / नमक / Salt – per taste
  • Coriander

Cooking – Dal

  1. In a bowl take chickpea lentils, pigeon pea(toor dal), black gram(urad dal), green gram (mung dal), Pink lentil (masoor dal)
  2. Wash and clean lentils thoroughly, transfer to pressure cooker
  3. Now add 3-4 cups water, close pressure cooker lid, and cook for 4-5 whistles then let the pressure cooker cool down.
  4. In a pan, melt ghee
  5. Add mustard seeds, let it splutter,
  6. Add cumin seeds, saute for 30 sec
  7. Add chopped green chilis, hing, saute for 30 sec
  8. Add chopped garlic, chopped ginger, saute for 30 sec
  9. Add chopped onion, saute till onion cooks
  10. Add turmeric, mix well
  11. Add chili powder, mix well
  12. Add tomato, saute till tomato cooks
  13. Add cooked lentils, mix well
  14. Bring to boil and let it simmer for 3-4 min
  15. Garnish with coriander, mix well
  16. Dal is ready ready, enjoy with bati

Tips

  1. Rubbing flour well with ghee is important to get khasta bati
  2. If you like you can make dal with toor lentil
  3. Dont kneed dough too much, crusty dough is perfect for this recipe

How to serve

  1. Crush bati then add dal, mix, top with ghee
