Ingredients – Cooking Mutton
- मटण / Mutton – 1 kg
- तेल / Oil – 1 tsp
- कांदा / प्याज / Onion – 1 cut
- हळद / हल्दी / Turmeric – 1 tsp
- मीठ / नमक / Salt – as per taste
- पाणी / Water – 1 cup
Cooking Mutton
- Wash mutton throughly with water
- Heat cooker on medium heat
- Add oil and onion, mix well, cook for 1-2 min
- Add mutton, mix well
- Add turmeric, salt to it, mix well cover and cook for 10-15 min
- Add 1 cup water mix well, close cooker lid and pressure cook mutton for 5-6 whistles
Ingredients – Masala
- वेलदोडा / इलायची / Cardamom – 2
- मोठी इलायची / मोटी इलायची / Black Cardamom – 1
- चक्र फूल / Star anise – 1
- दालिचनी / Cinnamon – 1 inch
- लवंग / लौंग / Clove – 4
- गदा / Mace – 1
- तमालपत्र / तेज़पत्ता / Bayleaf – 2-3
- लाल मिरची / लाल मिर्च / Red dry chili – 4-5
- खोब्र / नारियल / Dry Coconut grated -1/4 cup
- धने / धनिया / Coriander powder – 2 tbsp
- मीरे / काली मिर्च / Black peppers – 1/4 tsp
- जिरे / जीरा / Cumin seeds – 2 tsp
- काजू / Cashew – 1 tbsp
- कांदा / प्याज / Onion – 2 chopped
- लसुन / लेहसुन / Garlic – 6-7 cloves
- अदरक /Ginger – 1 inch
- टमाटर / Tomato – 1/2 cut
Making Masala
- Heat pan on low to medium
- Add cardamom, black cardamom, star anise, cinnamon, cloves, mace, bayleaf, dry red chilis, dry grated coconut, satue till light brown, remove and let it cool down
- In the same pan add coriander seeds, black pepper, cumin seeds roast till aromatic and light brown in color, remove and let it cool down
- Add cashew to pan, roast till light golden in color, remove and let it cool down
- Add chopped onion in pan roast till brown in color, turn of heat, let it cool down
- Take grinding jar, add all roasted masala, garlic, ginger, tomato grind all together, if required add little water and grind smooth fine masala
- Now lets make curry
Making Curry
- Cooked Mutton
- Grinded Masala
- तेल / Oil – 1/4 cup
- तिखट / लाल मिर्च / Chili powder – 2 tsp
- मीठ / नमक / Salt – as per taste
- कोथंबीर / धनिया पत्ता / Coriander for garnishing
Making Curry
- Heat deep pot on medium heat
- Add oil, once oil warms, add chili powder, sauté for 10-15 sec
- Add grinded masala, roast it till oil separates, make sure masala will not burn to the bottom
- Add earlier cooked mutton mix well,
- Add salt to taste, mix well
- Simmer gravy till oil rises on top
- Garnish with Coriander
- Spicy flavorful mutton curry is ready!
Tips
- Adjust whistles per Mutton type
- Make fine masala paste for smooth gravy
- Cook masala well till oil separation, this is important step for nice flavor
- Adjust water to your liking
