Rich creamy Rajbhog Ice-cream recipe

Ingredients Mawa

  • तूप / घी / Ghee – 1 tsp
  • दूध पावडर / Milk powder – 1/2 cup
  • दूध / Milk – 1/4 cup

Instructions Mawa

  1. Heat ghee in a pan
  2. Add milk powder, roast on low heat for 1 min
  3. Add milk, mix well
  4. Cook on low heat till mixture solidifies, and the color changes till light golden
  5. Let it cool down and crumble the mixture

Ingredients

  • दूध / Warm milk – 3 tbsp
  • केशर / केसर / Kesar – 1 pinch
  • Soaked almond and cashews

Instructions

  1. Kesar Milk: Add a pinch of Kasar in warm milk, mix well, set aside for 30 min
  2. Nuts Paste : Soak almonds and cashews for 2-3 hours, grind to fine paste

Ingredients Ice cream

  • बदाम / बादाम / Almonds – 2 tbsp
  • काजू / Cashew – 2 tbsp
  • पिस्ता / Pistachios – 1 tbsp
  • Heavy cream – 2.5 cup
  • कंडेन्सड दूध / Condensed Milk -1/2 cup
  • Almond and cashew paste
  • Mawa
  • Kesar milk
  • वेलदोडा / इलायची / Cardamom powder – 1 tsp
  • Rose petals
  • केवडा इससेन्स / केवड़ा इससेन्स / Kewra escense – 2 drops

Instructions

  1. Roast almonds, cashews, and pistachios til crunchy, let it cool down, and chopp in to small pieces
  2. In a bowl, take heavy cream, whip till it thickens
  3. Add condensed milk, whip to mixl
  4. Add almond and cashew paste, whip to mix
  5. Add crumbled mawa, whip to mix
  6. Add Kesar milk, whip to mix
  7. Add cardamom powder, whip to mix
  8. Add crushed rose petals, whip to mix
  9. Add Kewra escense, whip to mix
  10. Ready to set icecream, transfer to airtight container
  11. Refrigerate overnight
  12. Rich creamy Rajbhog icecream is ready!

How to serve

  1. Serve chilled!
  2. Top with finely chopped nuts and rose petals.

Tips

  1. Cook milk mixture on low to med heat to avoid burning
  2. Store bought mawa / milk mawa can be used as well
  3. Soaked nuts paste adds more richness to this recipe
  4. Garnish with roasted chopped nuts
