Ingredients
- चणा डाळ / चणा दाल / Cheakpea lentils – 1/4 cup
- तूर डाळ / तुवर दाल / Pigeon pea – 1/4 cup
- उळीद डाळ / उरद डाल / Black Gram – 2 tbsp
- धने / धिनया / Coriander seeds – 1 cup
- मीरे / काली िमर्च / Black peppers – 2 tsp
- मेथी दाना / Fenugreek – 1/2 tsp
- जरे / जीरा / Cumin seeds – 2 tsp
- लाल िमरची / लाल िमर्च / Red dry chili (non-spicy) – 1/2 cup
- लाल िमरची / लाल िमर्च / Red dry chili (spicy) – 1/2 cup
- कढीपत्ता / Dry curry leaves – 12-15
Cooking
- Roast chickpea lentils till aromatic
- Roast pigeon peas / toor daal till aromatic
- Roast coriander seeds till aromatic
- Roast black pepper seeds, fenugreek seeds, cumin seeds till aromatic
- Roast red non-spicy and spicy red chilis and set aside
- Let all roasted masala cool down
- Transfer cooled masala to grinder, add fried curry leaves, then grind to fine powder
- Flavorful, aromatic fresh sambar masala is ready!

- Freshly prepared sambar masala makes
- Sambar flavorful and tasty
- Make fine powder for best flavors
- Avoid roasting ingredients too much, just roast tilll aromatic / crispy
- You can also use sun dried ingredients instead of roasting
- Store in air tight container for couple of months
