Ingredients

  • चणा डाळ / चणा दाल / Cheakpea lentils – 1/4 cup
  • तूर डाळ / तुवर दाल / Pigeon pea – 1/4 cup
  • उळीद डाळ / उरद डाल / Black Gram – 2 tbsp
  • धने / धिनया / Coriander seeds – 1 cup
  • मीरे / काली िमर्च / Black peppers – 2 tsp
  • मेथी दाना / Fenugreek – 1/2 tsp
  • जरे / जीरा / Cumin seeds – 2 tsp
  • लाल िमरची / लाल िमर्च / Red dry chili (non-spicy) – 1/2 cup
  • लाल िमरची / लाल िमर्च / Red dry chili (spicy) – 1/2 cup
  • कढीपत्ता / Dry curry leaves – 12-15

Cooking

  1. Roast chickpea lentils till aromatic
  2. Roast pigeon peas / toor daal till aromatic
  3. Roast coriander seeds till aromatic
  4. Roast black pepper seeds, fenugreek seeds, cumin seeds till aromatic
  5. Roast red non-spicy and spicy red chilis and set aside
  6. Let all roasted masala cool down
  7. Transfer cooled masala to grinder, add fried curry leaves, then grind to fine powder
  8. Flavorful, aromatic fresh sambar masala is ready!

Tips

  1. Freshly prepared sambar masala makes
  2. Sambar flavorful and tasty
  3. Make fine powder for best flavors
  4. Avoid roasting ingredients too much, just roast tilll aromatic / crispy
  5. You can also use sun dried ingredients instead of roasting
  6. Store in air tight container for couple of months
