Ingredients – Brinjal Masala
- दूध / Whole milk – 1 ltr
- विरजण / Old sour curd – 1 tsp
Instructions
- Bring milk to boil
- Transfer to a bowl, let it cool down to lukewarm temperature. For winter season keep the milk to warm temperature
- Add 1 tsp sour curd, mix well
- Cover and set aside overnight
- You would get nice thick curd
How to serve
- Serve with sugar, black salt
- Serve with paratha
- Top chaat with curd enhance flavors

- Use whole milk
- Bring milk to boil before cooling down to lukewarm temprature
- Milk temperature should vary per season
- Summer time: Luke warm
- Winter time: Warm
- Use old sour curd (virjan) to make curd
- Use steel or clay pot to set the curd
