Ingredients Brinjal Masala

  • दूध / Whole milk – 1 ltr
  • विरजण / Old sour curd – 1 tsp

Instructions

  1. Bring milk to boil
  2. Transfer to a bowl, let it cool down to lukewarm temperature. For winter season keep the milk to warm temperature
  3. Add 1 tsp sour curd, mix well
  4. Cover and set aside overnight
  5. You would get nice thick curd

How to serve

  1. Serve with sugar, black salt
  2. Serve with paratha
  3. Top chaat with curd enhance flavors

Tips

  1. Use whole milk
  2. Bring milk to boil before cooling down to lukewarm temprature
  3. Milk temperature should vary per season
  4. Summer time: Luke warm
  5. Winter time: Warm
  6. Use old sour curd (virjan) to make curd
  7. Use steel or clay pot to set the curd
