Ingredients – Masala

  • धने / धनिया / Coriander seeds – 2 tbsp
  • जिरे / जीरा / Cumin seeds – 2 tsp
  • बडीशेप / सौंफ / Fennel seeds – 1 tsp
  • तीळ / तील / Sesame white – 1 tbsp
  • चक्र फूल / Star anise – 1
  • दालिचनी / Cinnamon – 1 inch
  • मीरे / काली मिर्च / Black peppers – 6-8
  • लवंग / लौंग / Clove – 4-5
  • मोठी इलायची / मोटी इलायची / Black Cardamom – 1
  • लाल मिरची / लाल मिर्च / Red dry chili – 4-5
  • तमालपत्र / तेज़पत्ता / Bayleaf – 2
  • खोब्र / नारियल / Dry Coconut grated – 2 tbsp
  • काळ मीठ / काला नमक / Pink Salt -1 tsp
  • आमचूर / Aamchoor powder – 1 tsp
  • डाळिंब / अनार / Pomegranate powder -1 tsp
  • तिखट / लाल मिर्च / Chili powder – 2 tsp
  • चिंचेची चटणी / इमली की चटणी / Sweet Tamarind chutney -3 tsp

Making Masala

  1. Roast coriander seeds, cumin seeds, fennel seeds, sesame seeds, star anise, cinnamon, black pepper, cloves, black cardamom, red dry chili, bay leaf, dry grated coconut
  2. Roast till aromatic, once cooled transfer to grinder
  3. Add pink salt, pomegranate powder, chili powder, grind to powder, transfer to a bowl
  4. Add sweet tamarind chutney mix well
  5. Add water to make paste

Ingredients – Potato Fillings

  • तेल / Oil – 2 tbsp
  • Masala paste
  • बटाटा / आलू / Potato boiled – 4
  • मीठ / नमक / Salt – per taste
  • खोब्र / नारियल / Coconut desiccated – 2 tbsp
  • कोथंबीर / धनिया पत्ता / Coriander leaves – 1/4 cup
  • सेव / शेव / Sev – 2 tbsp
  • डाळिंब / अनार / Pomegranate – 2 tbsp

Making Potato Filling

  1. Heat oil to medium in a pan
  2. Add masala paste, cook for 1 min
  3. Crush and add boiled potatoes, mix well, smash potatoes completely
  4. Add salt, mix well
  5. Cook for 4-5 min
  6. Once cooked, transfer to a bowl, make it flat
  7. Top with desiccated coconut, coriander leaves, sev and pomegranate

Ingredients- masala peanuts

  • भाजलेले शेंगदाने / भुने मूंगफल्ली / Peanuts roasted – 2 tbsp
  • तेल / Oil – few drops
  • तिखट / लाल मिर्च / Chili powder – a pinch
  • चाट मसाला / Chat masala – 1/4 tsp
  • पिठी साखर / शक्कर / Sugar powdered – 1/2 tsp
  • मीठ / नमक / Salt – per taste

Making Potato Filling

  1. In a bowl, take roasted peanuts
  2. Add few drops of oil, chili powder, chat masala, powdered sugar, salt
  3. Mix well and masala peanuts are ready!

Dabeli- Assembly ingredients

  • Potato fillings
  • चिंचेची चटणी / इमली की चटणी / Sweet Tamarind Chutney
  • कांदा / प्याज / Onion fine chopped – 1 small
  • Masala peanuts
  • सेव / शेव / Thin Sev – 1/4 cup
  • पाव / पाँव / Dabeli Pav – 6-7 easy recipe here

Assemling Dabeli

  1. Slit pav to create pocket
  2. Spread little sweet tamarind chutney
  3. Add 1-2 tsp potato fillings
  4. Add onion, masala peanuts
  5. Add more potato fillings on top
  6. Now dip dabeli in thin sev, dabeli is ready to bake, repeat for remaining dabelis
  7. Heat a pan on medium, grease with little butter, add dabeli, bake on all sides
  8. Ready to serve

Tips

  1. For more sweetness to dabeli, add 1 tsp powdered sugar to masala
  2. Avoid potato chunks to get best taste
  3. This is best party food, pre-assembled dabelis can be baked just before serving
  4. Serve with green and red chutney, ketchup
