Ingredients Brinjal Masala

  • दूध / Warm Milk – 1 cup
  • िपठी साखर / शक्कर / Sugar powdered – 1 tbsp
  • यीस्ट / Yeast – 1 tbsp
  • मैदा / White flour – 2.5 cup
  • मीठ/ नमक /Salt – 1 tsp
  • दूध पावडर / दूध पावडर / Milk powder – 2 tbsp
  • दूध / Milk (room temperature) – 1/2 cup
  • बटर / Butter – 2 tbsp

Instructions

  1. Take warm milk in bowl
  2. Add sugar dissolve completely
  3. Add yeast, mix, set aside for 15 min, this is needed to activate the yeast
  4. Now add flour, salt and milk powder, mix well
  5. Add remaining 1/2 cup milk, mix well,
  6. Grease platform with little ghee, and transfer the dough to platform
  7. Add butter little at a time and massage dough throughtly
  8. Dough will start to get together. takes about 5-7 min
  9. Now transfer the dough to large bowl,
  10. Cover and keep dough for 1 hour, the dough should rise
  11. Transfer dough to platform, divide in 9-10 equal parts
  12. Grease baking tray
  13. Take each part, tuck inside and make a smooth round, place these rounds in baking tray
  14. Cover with a cloth for 30 min,
  15. Meanwhile preheat oven to 350 F / 180 C
  16. After 30 min, brush dough rounds with milk.
  17. Bake for 20 min
  18. Once baked remove, apply little butter on top and cover with damp cloth for 30 min
  19. De-mold the pav
  20. Ready to serve! enjoy soft fluffy pav, bun

How to serve

  1. Serve fresh
  2. Serve with Vada pav, pav bhaji, dabeli, burji, bhaji

Tips

  1. Use fresh yeast to get best results
  2. We are using milk little more than half the portion of flour
  3. Dough is sticky in the begining, as you massage it, it will start to come together
  4. Covering baked bread with damp cloth makes them soft
