Ingredients – Brinjal Masala
- वांगी / बैंगन / Brinjal – 6-7 cut in wadges
- बटाटा / आलू / Potato – 1
- तेल / Oil – 2 tbsp
- मोहरी / राई / Mustard seeds – 1 tsp
- जीर / जीरा / Cumin seeds – 1 tsp
- लसुन / लेहसुन / Garlic – 4-5 chopped
- िहरवी िमरची / हरी िमर्च / Green Chili – 4-5
- कांदा / प्याज / Onion – 1 chopped
- मीठ / नमक / Salt – as per taste
- हळद / हल्दी / Turmeric – 1/2 tsp
- Water – 1
- कोळंबी / झींगा / Shrimp (peeled) – 7-8
- कोथंबीर / धनिया पत्ता / Coriander for garnishing
Instructions
- Heat pan on medium, add oil, add mustard seeds once mustard seeds cracked nicely add cumin seeds
- Now add garlic, green chilis sauté for 30 sec,
- Now add onion sauté till onion cooks and became soft
- Add turmeric saute
- Add brinjal and potato, mix well
- Add salt, mix well
- Add water mix well, cover and cook for 4-5 min
- Now add washed and peeled shrimp, mix well cook for 2-3 more min on medium heat
- Garnish with coriander leaves
- Yummy brinjal shrimp curry is ready!
How to serve
- Serve hot!
- Serve with Chapati, Roti, Naan
Tips
- Small brinjal are best suited for this recipe
- Shrimp curling up is an indication that is cooked
- Add little water at a time.
- Serve with roti, chapati, rice, bhakari
