Mango Coconut Barfi

Ingredients

  • आंबा / आम / Fresh Ripe Mango – 1
  • केसर / Saffron – a pinch
  • दूध / Warm Milk – 1/4 cup
  • साखर / शक्कर / Sugar – 1 cup
  • दूध / Milk – 1/2 cup
  • खोब्र / नािरयल / Desiccated Coconut – 2.5 cup
  • वेलदोडा / इलायची / Cardamom powder – 1/4 tsp
  • दूध पावडर / Milk powder – 1/4 cup
  • आंब्याचा सार / आमका सार / Mango essense – 1/2 tsp
  • िपस्ता / Pistachios crushed – 1 tbsp

Instructions

  1. Peel mando skin, cut in small pieces, discard seed.
  2. Grind mango pieces to mango puree
  3. Add about 2 tbsp warm milk to saffron, mix well
  4. Heat a pan on medium, add mango puree
  5. Add sugar, mix well
  6. Add milk, mix well, cook for 2-3 min
  7. Add desiccated coconut, cardamom powder, mix well
  8. Add milk powder, mix well, cook for 1-2 min
  9. Add mango essence, mix well
  10. Barfi is ready to set
  11. Add parchment paper to tray, add mixture, level it flat
  12. Keep in refrigerator for 30-40 min
  13. Demold, cut in desired size pieces

Tips

  1. Makes 16 pieces
  2. Fresh ripe mango gives this recipe fresh taste
  3. Alternatively mango pulp can also be used
  4. Greasing tray with ghee is an alternative to parchment paper
  5. Store in refrigerator for 2-3 days
