Ingredients
- आंबा / आम / Fresh Ripe Mango – 1
- केसर / Saffron – a pinch
- दूध / Warm Milk – 1/4 cup
- साखर / शक्कर / Sugar – 1 cup
- दूध / Milk – 1/2 cup
- खोब्र / नािरयल / Desiccated Coconut – 2.5 cup
- वेलदोडा / इलायची / Cardamom powder – 1/4 tsp
- दूध पावडर / Milk powder – 1/4 cup
- आंब्याचा सार / आमका सार / Mango essense – 1/2 tsp
- िपस्ता / Pistachios crushed – 1 tbsp
Instructions
- Peel mando skin, cut in small pieces, discard seed.
- Grind mango pieces to mango puree
- Add about 2 tbsp warm milk to saffron, mix well
- Heat a pan on medium, add mango puree
- Add sugar, mix well
- Add milk, mix well, cook for 2-3 min
- Add desiccated coconut, cardamom powder, mix well
- Add milk powder, mix well, cook for 1-2 min
- Add mango essence, mix well
- Barfi is ready to set
- Add parchment paper to tray, add mixture, level it flat
- Keep in refrigerator for 30-40 min
- Demold, cut in desired size pieces
Tips
- Makes 16 pieces
- Fresh ripe mango gives this recipe fresh taste
- Alternatively mango pulp can also be used
- Greasing tray with ghee is an alternative to parchment paper
- Store in refrigerator for 2-3 days
