Ingredients
- धने / धिनया / Coriander seeds – 2 tsp
- बडीशेप/ सौंफ / Fennel – 1 tsp
- मेथी / Fenugreek – 1/4 tsp
- जीर / जीरा / Cumin seeds – 1 tsp
- तेल / Oil – 1 tbsp
- मोहरी / राई / Mustard seeds – 1 tsp
- हींग / Asafoetida – a pinch
- लसुन / लेहसुन / Garlic – 2-3 cloves chopped
- अदरक /Ginger – 1/2 inch chopped
- ितखट / लाल िमर्च / Chilli powder – 1 tsp
- मीठ / नमक / Salt – per your taste
- साखर / शक्कर / Sugar – 1/4 cup
Cooking
- Roast coriander seeds, fennel seeds and cumin seeds together till light golden, let it cool down.
- Grind to coarse powder
- Now heat oil in pan
- Add mustard seeds, let it pop
- Add pinch of asafetida, mix well
- Add chopped garlic, ginger, saute for 30 sec
- Add cut mango, mix well
- Add chili powder, mix well
- Add grinder masala, mix well
- Add salt to taste, mix well
- Add about 1 cup water, bring to boil, cover and cook for 4-5 min
- Add sugar, mix well, cook for 2-3 min more
- Ready to serve!
Tips
- Use raw green tangy mangos
- Add more water as needed for cooking may vary with type of mango
