Ingredients

  • धने / धिनया / Coriander seeds – 2 tsp
  • बडीशेप/ सौंफ / Fennel – 1 tsp
  • मेथी / Fenugreek – 1/4 tsp
  • जीर / जीरा / Cumin seeds – 1 tsp
  • तेल / Oil – 1 tbsp
  • मोहरी / राई / Mustard seeds – 1 tsp
  • हींग / Asafoetida – a pinch
  • लसुन / लेहसुन / Garlic – 2-3 cloves chopped
  • अदरक /Ginger – 1/2 inch chopped
  • ितखट / लाल िमर्च / Chilli powder – 1 tsp
  • मीठ / नमक / Salt – per your taste
  • साखर / शक्कर / Sugar – 1/4 cup

Cooking

  1. Roast coriander seeds, fennel seeds and cumin seeds together till light golden, let it cool down.
  2. Grind to coarse powder
  3. Now heat oil in pan
  4. Add mustard seeds, let it pop
  5. Add pinch of asafetida, mix well
  6. Add chopped garlic, ginger, saute for 30 sec
  7. Add cut mango, mix well
  8. Add chili powder, mix well
  9. Add grinder masala, mix well
  10. Add salt to taste, mix well
  11. Add about 1 cup water, bring to boil, cover and cook for 4-5 min
  12. Add sugar, mix well, cook for 2-3 min more
  13. Ready to serve!

Tips

  1. Use raw green tangy mangos
  2. Add more water as needed for cooking may vary with type of mango

How to serve

  1. Serve as side dish
  2. Refregerate to use for longer period
