Ingredients
- मैदा / White flour -1 cup
- रवा / सूजी / Sooji – 1/4 cup
- मीठ / नमक / Salt – per taste
- बेिकंग सोडा / Baking Soda – 1/2 tsp
- बेिकंग पावडर / Baking Powder – 1.5 tsp
- िपठी साखर / शक्कर / Sugar powdered – 1 tbsp
- दही / Curd – 1/4 cup
- तेल / Oil – 3 tbsp
- तेल / Oil – for frying
Preparing
- Take a mixing bowl, add while flour, sooji, salt to taste, baking soda, baking powder, and powdered sugar, then mix well
- Add curd, 3 tbsp. oil, mix well, break all lumps
- Now add little water at a time, to make medium dough,
- Cover for 5 min, this gives sooji time to soak and become soft
- Now take the dough, massage for about 10 min to make to smooth, soft and elastic,
- Cover dough with a cloth and keep in little warm place
- Heat oil to high
- After 2 hours, take lemon size portion, roll it flat and then drop in hot oil
- Press gently on the non-puffed side to help with puffing.
- Turn and cook for 10 more seconds, repeat till both sides are golden or desired consistency
- Perfect Bhatura is ready !
Tips
- Sooji give a little crispness to bhatura
- Before messaging dough, 5-10 min soaking time needed for sooji to soak water & soften
- Sugar helps balance the taste well and gives nice golden color to bhatura
- Use bigger sized frying pot for nice puffed bhatura
