Ingredients
- गवती चहा / नीबू घास / Lemon grass – 1
- लिंबू साल / नींबू छिलका / Lemon Peel – 1/2inch
- लसुन / लेहसुन / Garlic – 2-3 cloves
- कांदा / प्याज / Onion – 1
- अद्रक/ अदरक / Ginger – 2 inch
- गाजर / Carrot – 1 sliced
- ब्रोकोली देठ / ब्रोकोली जड़ / Broccoli stem- 1 cup
- कोथंबीर / धिनया पत्ता / Coriander leaves
- मीठ / नमक / Salt – per taste
- केचप / Ketchup – 1 tbsp
- सोया सॉस / Soy sauce – 1 tbsp
- नारळाचे दुध / नािरयल का दूध / Coconut milk – 1 cup
- साखर / शक्कर / Brown Sugar – 1 tbsp
- तेल / Oil – 1 tbsp
- कांदा / प्याज / Onion – 1 small
- मिरचीचे फ्लेक्स / िमर्च के फ्लेक / Chili flakes – 1 tsp
- मशरूम / Mushroom – 5-6 sliced
- लिंबू / नींबू / Lime juice – 1 tbsp
Cooking
- Cut lemon grass in to small pieces
- Cut small piece of lemon peel
- Cut and smash garlic
- Now heat a 6 cup of water, add onion, ginger, carrot, broccoli, coriander leaves, lemon peel salt to taste, mix well, bring to boil, then cover and simmer for 5-6 min
- Add ketchup, soy sauce, 1/2 cup coconut, brown sugar, mix well
- Cook for 2 min more
- Strain the stock, discard vegetables
- Heat oil in pan, add onion and chili flakes, mushroom saute for 30 sec
- Add broth, mix well
- Add 1/2 cup coconut milk, mix well. Bring to boil
- Add lime juice and mix well
- Ready to serve!
Tips
- Use only about 1/2 inch fresh lemon peel to make stock
- More veggies like carrot, bell pepper can also be added to the soup
- Adjust chilli flakes to according to your spice level
- Dont overcook veggies to get nice crunch
