Ingredients
- दूध / Milk – 1.5 ltr
- Vinegar – 2 bsp dilute with Water – 2 tbsp
- आंबे पल्प / आम पल्प / Mango pulp – 1/2 cup
- साखर / शक्कर / Sugar – 1/4 cup
- तूप/ घी / Ghee – 1 tsp
- दूध पावडर/ Milk powder – 1 cup
- Additional दूध/ Milk – 1/2 cup
- Additional साखर / शक्कर/ Sugar – 2 tbsp
- वेलदोडा / इलायची / Cardamom powder – a pinch
- आंबे सार / आम सार/ Mango Essence – 1/2 tsp
Instructions
- Boil 1.5 liter milk
- Add diluted vinegar solution, mix, milk with start to curdle.
- Now strain curdled milk in muslin cloth
- Wash with cold water to remove vinegar taste
- Collect cloth and squeeze gently to remove water, set aside fo for 20 min
- Now heat a pan on low, add mango pulp
- Add 1/4 cup sugar, depends on mango sweetness, mix well, cool till it thickens and water us evaporated, set aside
- Take another pan, heat on low, add ghee
- Add milk powder, mix well
- Add 1/2 cup milk, mix well, break all lump
- Add 2 tbsp sugar, mix well, cool till mixture thickens and water is evaporated
- add cardamom powder, mix well
- Set aside a little about 1.8 white mawa
- Add cooked mango pulp, and mango essence to left over mawa, mix well
- Cook for 1-2 min or until thickens
- Once cooled, massage white mawa a little, make small peasize balls
- Now take small lime size mango mawa portion, massage gently, flatten it a little
- Place white mawa in and wrap with mango mawa carefully, roll to make it smooth
- Yummy Mango Mawa Malai Ladoos are ready!
Tips
- Diluted vinegar makes soft paneer, just add 2 tbsps water to 2 tbsp vinegar
- Mango essence enhances flavor
- Massaging Paneer helps make ladoos soft and moist
- Adjust sugar to your liking
