Ingredients
- चणे/ काबुली चना / Chickpea – 1 cup
- चहा पत्ती/ चाई पत्ती/ Tea Powder – 3 tsp
- मोटी इलायची / Black Cardamom – 1
- दालचीनी / Cinnamon – 1 inch
- मीठ / नमक / Salt – to taste
- धने / धनिया / Coriander seeds – 2 tsp
- जीरे / जीरा / Cumin seeds – 1 tsp
- बडीशेप/ सौंफ / Fennel seeds – 1tsp
- मेथी दाना/ Fenugreek – 1/4 tsp
- मीरे / काली िमर्च / Black peppers – 1/4 tsp
- लाल िमर्च / Spicy red dry chili – 3-4
- लाल िमर्च / Non spicy(for color) chili – 3-4
- गरम मसाला / Garam Masala – 1 tsp
- डाळिंब पावडर / अनार दाना / Pomegranate Powder – 1 tsp
- आमचूर / Aamchoor powder – 1 tsp
- काळ मीठ / काला नमक / Black Salt -1/2 tsp
- हींग / Asafoetida – 1/4 tsp
- हळद / Turmeric – 1/4 tsp
- तेल / Oil – 3 tbsp
- तमालपत्र / तेज़पत्ता / Bayleaf – 2
- कांदा / प्याज / Onion -2 (paste)
- अद्रक लसुन पेस्ट / अदरक लेहसुन पेस्ट / Ginger Garlic paste – 2 tbsp
- टमाटर / Tomato – 4 (puree)
- कोथंबीर / Coriander leaves
Cooking
- First wash chickpea and rinse, soak overnight
- After soaking drain chickpea
- Create a tea powder pouch with muslin cloth
- Now add soaked chickpea to pressure cooker, add water, salt, cardamom, cinnamon, tea pouch to the pressure cooker
- Add 3-4 cups water, pressure cook for 5-6 whistles
- Let the pressure cooker cool down, then remove and discard tea pouch, separate chole and stock for later use.
- Heat a pan on med heat, add coriander seeds, cumin seeds, fennel seeds, fenugreek, black peppers saute till light golden, remove and let it cool down
- Now roast spicy and non spicy red dry chilis till crisp, remove and let it cool down
- Grind roasted seeds, roasted chilies, Garam Masala, pomegranate powder, Aamchoor powder, black salt, asafetida, turmeric together to fine powder
- Take pot, heat on medium, add oil
- Add bayleaf, saute for 30 sec
- Add onion paste, saute till onion is cooked
- Add ginger, garlic paste, saute till it cooks
- Add tomato puree, mix well, cover and cook gor 3-4 min
- Add boiled and cooked chickpea, chole to the masala, mix well
- Add chole stock mix well
- Adjust salt to taste, mix well
- Simmer for additional 4-5 min
- Garnish with coriander, mix well!
- Yummy Cholle Masala is ready!
Tips
- Soaking at leat 6-7 hours is necessary
- Cooking with tea powder gives nice dark color to chole and baking soda gives softness
- Homemade chole masala give unique taste much better than store bought masala
