Ingredients

  • कैरी/ कच्चा आम/ Raw Mango – 1 large
  • साखर/ शक्कर/ Sugar – 3-4 tbsp
  • मीठ/ नमक/ Salt – to taste
  • तूप / घी / Ghee
  • जीरे / जीरा / Cumin seeds – 1 tsp
  • गहु पीठ / गेहू आटा / Wheat flour – 1 tsp
  • मीरे पूड / काली  िमर्च / Black peppers – 1/4 tsp
  • पुदीना / Mint leaves – for decoration

Making Panha

  1. Take a large raw mango
  2. Pressure cook for 3-4 whistles, until soft and let cool down till warm
  3. Extract pulp from the seed and the skin
  4. Grind pulp with sugar and little salt to fine paste
  5. Heat a pan on med, add ghee
  6. Once the ghee melts, add cumin seeds, wheat flour, saute for 30 sec
  7. Add pureed pulp, mix well
  8. Add 1-2 cup water to get desired consistency
  9. Simmer for 2-3 min, stir occasionally
  10. turn off heat, let it cool down
  11. Refrigerate before serving, or add ice before serving
  12. Enjoy this summer special cooling drink

Tips

  1. Adjust pressure cooker whistles as per mago type
  2. Jaggery(grated – 6 tbsp) is an alternative to sugar
  3. Chilled panha / panna taste more flavorful and soothing
  4. Sure to quench your thirst and cool you down

How to serve

  1. Serve chilled!
  2. This is seasonal drink enjoyed in summer time
