Ingredients – Strawberry Ice cream
- काजू / Cashew -1 tbsp
- िपस्ता / Pistachio – 1 tbsp
- बदाम / Almonds – 1 tbsp
- बडीशेप/ सौंफ / Fennel seeds – 1/2 tbsp
- इलायची / Cardamom – 2
- लवंग / लौंग / Clove – 2
- मीरे / काली िमर्च / Black peppers – 6
- दूध पावडर / Milk powder – 1/4 cup
- कॉर्न स्टार्च / Corn starch – 1 tbsp
- दूध / Milk – 1 cup
- पीठी साखर / शक्कर / Powdered Sugar -1/4 cup
- गुलकंद / Rose petal spread – 1 tbsp
- खोब्र / नािरयल / Desicated Coconut – 2 tbsp
- टूटी फ्रूटी / Tutti frutti – 1 tbsp
- िवड्याचे पान / Betel Leaf – 4-5
- कंडेन्सड दूध / Condensed Milk -1/4 cup
- Heavy cream – 1 cup
- खाण्याचे रंग / Food color (optional)
Instructions
- In am bowl take cashews, pistachios, Almonds, Fennel seeds, cardamom, clove, black pepper, add water to soak them completely
- Soak for 4–5 hours
- Now another mixing bowl, add milk powder, corn starch, add little milk and whisk to make it smooth paste,
- Add remaining milk to and mix well
- Add powdered sugar, mix well
- Heat a pan open low heat, cook the mixture till it thickens, stir continuously to avoid lumps
- Once the mixture thickens, turn off heat, transfer to mixing bowl for cooling
- Now grind the soaked paan masala to fine paste
- Add Gulkand, dedicated coconut, tutti fruiti, betel leaves , grind again to make paan masala
- Now add this paan masala to milk mixture and mix well, set aside
- Add condensed milk, mix well. set aside this sweet paan masala
- Take another bowl, add heavy cream , whip till it becomes light and fluffy
- Add sweet paan masala, whip again to till light and fluffy
- Add green color to get additional green color, this is am optional step
- Pan Ice-cream is ready to freeze
- Freeze ice-cream for 7-8 hours in air tight container
- Refreshing Paan ice-cream is ready!
How to serve
- Serve chilled!
- Topping like fennel seeds, chopped dry fruits, desicated coconut , tutti-frutti can be used for decoration
Tips
- Adding nuts to paan masala gives it nice creamy texture and rich flavors
- Grind paan masala fine to get smooth texture
- If you use hot water, soak paan masala for 30 min
