Ingredients Strawberry Ice cream

  • काजू / Cashew -1 tbsp
  • िपस्ता / Pistachio – 1 tbsp
  • बदाम / Almonds – 1 tbsp
  • बडीशेप/ सौंफ / Fennel seeds – 1/2 tbsp
  • इलायची / Cardamom – 2
  • लवंग / लौंग / Clove – 2
  • मीरे / काली िमर्च / Black peppers – 6
  • दूध पावडर / Milk powder – 1/4 cup
  • कॉर्न स्टार्च / Corn starch – 1 tbsp
  • दूध / Milk – 1 cup
  • पीठी साखर / शक्कर / Powdered Sugar -1/4 cup
  • गुलकंद / Rose petal spread – 1 tbsp
  • खोब्र / नािरयल / Desicated Coconut – 2 tbsp
  • टूटी फ्रूटी / Tutti frutti – 1 tbsp
  • िवड्याचे पान / Betel Leaf – 4-5
  • कंडेन्सड दूध / Condensed Milk -1/4 cup
  • Heavy cream – 1 cup
  • खाण्याचे रंग / Food color (optional)

Instructions

  1. In am bowl take cashews, pistachios, Almonds, Fennel seeds, cardamom, clove, black pepper, add water to soak them completely
  2. Soak for 4–5 hours
  3. Now another mixing bowl, add milk powder, corn starch, add little milk and whisk to make it smooth paste,
  4. Add remaining milk to and mix well
  5. Add powdered sugar, mix well
  6. Heat a pan open low heat, cook the mixture till it thickens, stir continuously to avoid lumps
  7. Once the mixture thickens, turn off heat, transfer to mixing bowl for cooling
  8. Now grind the soaked paan masala to fine paste
  9. Add Gulkand, dedicated coconut, tutti fruiti, betel leaves , grind again to make paan masala
  10. Now add this paan masala to milk mixture and mix well, set aside
  11. Add condensed milk, mix well. set aside this sweet paan masala
  12. Take another bowl, add heavy cream , whip till it becomes light and fluffy
  13. Add sweet paan masala, whip again to till light and fluffy
  14. Add green color to get additional green color, this is am optional step
  15. Pan Ice-cream is ready to freeze
  16. Freeze ice-cream for 7-8 hours in air tight container
  17. Refreshing Paan ice-cream is ready!

How to serve

  1. Serve chilled!
  2. Topping like fennel seeds, chopped dry fruits, desicated coconut , tutti-frutti can be used for decoration

Tips

  1. Adding nuts to paan masala gives it nice creamy texture and rich flavors
  2. Grind paan masala fine to get smooth texture
  3. If you use hot water, soak paan masala for 30 min
