Ingredients – Vadas / Bhalla
- उळीद डाळ / उरद की दाल / Black Gram Lentil – 1 cup
- हिरवी मिर्ची / हरी मिर्च / Green Chili – 2
- अद्रक / अदरक / Ginger paste – 1 tsp
- मीठ / नमक / Salt – as per taste
- तेल / Oil – frying
Making – Vada / Bhalla
- Wash and rinse black gram well and soak in water for 6-8 hours or over night
- After soaking, strain lentils and add green chilis and ginger mix well
- Grind little dal at time and make fine paste, use little water to help with grinding
- Add salt to dal paste and mix well
- Now whisk dal paste for 5-6 minute to become light and fluffy, this make soft and spongy vada
- Heat oil in kadai for frying
- Drop small balls of dal paste in medium heated oil. this could be tricky because urid dal is sticky, wet your palms with little water before dropping dal paste balls in oil
- Fry vadas on medium heat to get done inside. Fry vadas until light golden
- similarly fry all vadas
Ingredients – Curd
- दही / Curd – 2 cups
- साखर / शक्कर / Sugar – 1/4 cup
Making – Sweet Curd
- Take curd in a mixing bowl, whisk to make it smooth
- Add sugar, mix well and refrigerate
Ingredients – Green Chutney
- कोथंबीर / धिनया पत्ता / Coriander – 1 cup
- हिरवी मिर्ची / हरी मिर्च / Green Chili – 4
- अद्रक / अदरक / Ginger paste – 1 inch
- पुदीना / Mint leaves – 1/4 cup
- मीठ / नमक / Salt – 1/4 tsp
- काळ मीठ / काला नमक / Black Salt – 1/4 tsp
- लिंबूचा रस / नींबूका रस / Lime juice – 1 tbsp
- फिक्के शेव / फिका सेव / Non Spicy Sev – 2 tbsp
Making – Green Chutney
- Take grinding jar add coriander, green chilies, ginger paste, mint leaves, black salt, lime juice, sev make smooth paste
- Use little water if needed
- Green chutney is ready!
Ingredients – Assembly
- Sweet curd
- Green Chutney
- चिंचेची चटणी/ मिठी चटनी / Sweet Tamarind chutney
- जीरेपूड / जीरा पावडर / Cumin powder
- ओवा पावडर / अजवाइन पावडर / Ajwain powder
- चाट मसाला / Chaat Masala
- तिखट / लाल मिर्च / Chili powder
- शेव / सेव / Fine Sev
Assembling Dahi Vadas/ Bhalle
- Soak all fried vadas in luke warm water for 30 min. you can change water in between, it will help to remove excess oil
- Squeeze soaked vada gently to remove excess water
- Place 4-5 vade/bhalle in serving bowl
- Pour generous amount of chilled sweet curd over vadas/bhalle
- Top with 1-2 tsp green chutney, 1-2 tsp sweet tamrind chutney, pinch of roasted cumin powder, pinch of ajwain powder, a pinch chaat masala, pinch of red chili powder, top with Nylon sev
- Yummy Dahi vade/bhalle is ready ! Enjoy!
Tips
- You can add 1-2 tbsp water to help with grinding daal
- Whisking daal paste well will give you light and songy vadas
- Squeeze excess water before serving, to get best taste
- If you like, you could also use sweet curd
- Serve as party snack

The recipe looks delicious. A small point, you don’t mention the soaking the vadas stage after the frying.
