Ingredients – Thandai Masala
- बदाम / Almonds – 2 tbsp
- काजू / Cashew – 1 tbsp
- िपस्ता / Pistachios – 1 tbsp
- बडीशेप / सौंफ / Fennel seeds – 1 tbsp
- खसखस / poppy seeds – 1 tbsp
- चारोळी / चिरोंजी / Buchanania lanzan- 1 tsp
- मीरे / काली िमर्च / Black peppers – 10
- इलायची / Cardamom – 4
- लवंग / लौंग / Clove – 2
- गुलकंद / Rose petal spread – 2 tbsp
- साखर / शक्कर / Sugar – 1 cup
- केसर / Kesar – 8-10 strands
Instructions Thandai Masala
- Take bowl, add almonds, cashews, pistachios, fennel seeds, poppy seeds, chironji/charoli, Black pepper, cardamom, clove, Rose petal spread/Gulkand
- Add water, and soak masala overnight
- Next morning, grind soaked masala to fine paste,
- Now heat a pan on medium, add sugar, add 1/2 cup water, mix well til sugar dissolves
- Add Kesar, mix well, stir.
- Now add grinder thandai paste, mix well, cook on med heat
- Rinse left over masala with little water and add to the pan
- Cook till masala is thickens and becomes creamy, turn off heat and let it cool down
- Now we have thandai masala ready, store in refrigerator
Ingredients – Kesar Thandai
- Thandai Masala – 3 tsp
- दूध / Milk – 1 glass
- साखर / शक्कर / Sugar – 1 tbsp
- बर्फ / Ice
Instructions Kesar Thandai
- Take a mixing bowl, add 3 tsp thandai masala
- Add milk, sugar mix well, till all sugar dissolves
- Take serving glass, add ice, pour thandai
- Top with fine chopped pistachios and rose petals
- Kesar thandai is ready
Ingredients – Rose Thandai
- Thandai Masala – 3 tsp
- दूध / Milk – 1 glass
- Rose syrup – 1 tbsp
- बर्फ / Ice
Instructions Rose Thandai
- Take a mixing bowl, add 3 tsp thandai masala
- Add rose syrup
- Add milk, sugar mix well
- Take serving glass, add ice, pour thandai
- Top with fine chopped pistachios and rose petals
- Rose Thandai is ready!
Ingredients – Paan Thandai
- Thandai Masala – 3 tsp
- खायचं पान / Betel leaf – 1-2
- गुलकंद / Rose petal spread – 1 tbsp
- दूध / Milk – 1 glass
- बर्फ / Ice
Instructions Paan Thandai
- Grind betel leave, with thandai masala and Gulkand/rose petal spread to fine paste
- Transfer the paan thandai to mixing bowl,
- Add milk, mix well
- Take serving glass, add ice, pour thandai
- Top with fine chopped pistachios and rose petals
- Paan Thandai is ready!

Tips
- Makes thandai masala for 10 glasses
- If you are in rush soak dry masala in warm water for 5-4 hours
- Grind masala paste fine to get smooth thandai
- Serve ice chilled for best test, you can also add some vanilla ice cream
- Store thandai masala paste in freeze for a week
