Ingredients Thandai Masala

  • बदाम / Almonds – 2 tbsp
  • काजू / Cashew – 1 tbsp
  • िपस्ता / Pistachios – 1 tbsp
  • बडीशेप / सौंफ / Fennel seeds – 1 tbsp
  • खसखस / poppy seeds – 1 tbsp
  • चारोळी / चिरोंजी / Buchanania lanzan- 1 tsp
  • मीरे / काली िमर्च / Black peppers – 10
  • इलायची / Cardamom – 4
  • लवंग / लौंग / Clove – 2
  • गुलकंद / Rose petal spread – 2 tbsp
  • साखर / शक्कर / Sugar – 1 cup
  • केसर / Kesar – 8-10 strands

Instructions Thandai Masala

  1. Take bowl, add almonds, cashews, pistachios, fennel seeds, poppy seeds, chironji/charoli, Black pepper, cardamom, clove, Rose petal spread/Gulkand
  2. Add water, and soak masala overnight
  3. Next morning, grind soaked masala to fine paste,
  4. Now heat a pan on medium, add sugar, add 1/2 cup water, mix well til sugar dissolves
  5. Add Kesar, mix well, stir.
  6. Now add grinder thandai paste, mix well, cook on med heat
  7. Rinse left over masala with little water and add to the pan
  8. Cook till masala is thickens and becomes creamy, turn off heat and let it cool down
  9. Now we have thandai masala ready, store in refrigerator

Ingredients Kesar Thandai

  • Thandai Masala – 3 tsp
  • दूध / Milk – 1 glass
  • साखर / शक्कर / Sugar – 1 tbsp
  • बर्फ / Ice

Instructions Kesar Thandai

  1. Take a mixing bowl, add 3 tsp thandai masala
  2. Add milk, sugar mix well, till all sugar dissolves
  3. Take serving glass, add ice, pour thandai
  4. Top with fine chopped pistachios and rose petals
  5. Kesar thandai is ready

Ingredients Rose Thandai

  • Thandai Masala – 3 tsp
  • दूध / Milk – 1 glass
  • Rose syrup – 1 tbsp
  • बर्फ / Ice

Instructions Rose Thandai

  1. Take a mixing bowl, add 3 tsp thandai masala
  2. Add rose syrup
  3. Add milk, sugar mix well
  4. Take serving glass, add ice, pour thandai
  5. Top with fine chopped pistachios and rose petals
  6. Rose Thandai is ready!

Ingredients Paan Thandai

  • Thandai Masala – 3 tsp
  • खायचं पान / Betel leaf – 1-2
  • गुलकंद / Rose petal spread – 1 tbsp
  • दूध / Milk – 1 glass
  • बर्फ / Ice

Instructions Paan Thandai

  1. Grind betel leave, with thandai masala and Gulkand/rose petal spread to fine paste
  2. Transfer the paan thandai to mixing bowl,
  3. Add milk, mix well
  4. Take serving glass, add ice, pour thandai
  5. Top with fine chopped pistachios and rose petals
  6. Paan Thandai is ready!

How to serve

  1. Serve chilled!
  2. Refreshing summer party drink

Tips

  1. Makes thandai masala for 10 glasses
  2. If you are in rush soak dry masala in warm water for 5-4 hours
  3. Grind masala paste fine to get smooth thandai
  4. Serve ice chilled for best test, you can also add some vanilla ice cream
  5. Store thandai masala paste in freeze for a week
