Ingredients – Korma

  • फुलगोबी / Cauliflower – 1
  • काजू / Cashews – 10-12
  • खसखस / poppy seeds – 1 tbsp
  • मीठ / नमक / Salt – 1 tbsp
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • ओल खोब्र / नािरयल / Wet Coconut – 1/2 cup
  • तेल / Oil – 3 tbsp
  • दालचीनी / Cinnamon – 1/2 inch
  • मोटी इलायची / Black Cardamom – 1
  • इलायची / Cardamom – 1
  • लवंग / लौंग / Clove – 2
  • मीरे / काली मिर्च/ Black peppers – 4
  • तमालपत्र/ तेज़पत्ता / Bayleaf – 1
  • जीर / जीरा / Cumin seeds – 1 tsp
  • अदरक / Ginger (grated) – 1 tbsp
  • लसुन / लेहसुन / Garlic (grated) – 1 tbsp
  • कांदा / प्याज / Onion (chopped)- 1
  • मिरची / Green Chili (slit) – 3-4
  • टमाटर / Tomato (chopped) – 2-3
  • मीठ / नमक / Salt – 1 tsp
  • धने / धनिया / Coriander powder – 1 tsp
  • गरम मसाला / Garam Masala – 1 tsp
  • बडीशेप / सौंफ / Fennel seeds powder – 1/2 tsp
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • तिखट / लाल मिर्च / Chili powder – 2 tsp
  • दही / Curd – 1/4 cup
  • मटर / Green Peas – 1/4 cup
  • Coriander for garnishing

Making Korma

  1. Soak cashew and poppy seeds in hot water for 20-30 min
  2. Cut Cauliflower in to medium sized florets.
  3. Boil water, add 1/2 tsp turmeric, and turn off heat
  4. Now add cauliflower florets to the hot water, leave in hot water for 5 min
  5. After 5 min strain florets and keep aside
  6. Add coconut to grinding jar
  7. Strain cashew and poppy seeds, add to the grinding jar, grind to fine paste
  8. Heat oil on medium in a pan
  9. Add cinnamon, black cardamom, cardamom, cloves, black pepper seeds, bayleaf, cumin seeds, saute till aromatic
  10. Add ginger and garlic, saute for 30 sec
  11. Add onion, saute till soft
  12. Add green chili, saute till chili is soft
  13. Add tomato, cook till tomato softens
  14. Add salt to taste, coriander powder, Garam Masala, fennel seeds powder, turmeric, chili powder, saute for 30 sec
  15. Add cauliflower, mix well, cover and cook for 2-3 min
  16. Add coconut-cashew paste, water, mix well, cover and cook for 2-3 min more
  17. Add curd, mix well, cover and cook for 2-3 min more
  18. Add green peas, mix well. cook for 2 additional minutes
  19. Korma is ready! Garnish with coriander

Tips

  1. Adding florets in hot turmeric water cleans cauliflower completely
  2. Cut florets medium sized
  3. Adjust cooking time for florets to get desired softness
  4. Adding curd is optional

How to serve

  1. Serve Hot!
  2. Serve with Roti, Naan, Chapati, Rice
