Ingredients
- लापशी रवा / दलिया / Broken Wheat – 1 cup
- तूप / घी / Ghee – 2 tbsp
- बदाम / Almonds (sliced) – 10-12
- मनुका / किश मिश/ Rasins – 12-14
- खोब्र / नारियल / Wet Coconut (grated)- 2 tbsp
- गुड़ / Jaggery – 1 cup
- दूध / Milk (Hot) – 2 cup
- इलायची / Cardamom powder – 1/2 tsp
- जायफळ / Nutmeg – a pinch
- काजू / Cashew splits – 10-12 pc
- पिस्ता / Pistachios
- केसर / Kesar
Preparation
- Wash Daliya/broken whent throughly
- Pressure cook for 5-6 whistles on med heat
- Heat a pan on med, add tbsp ghee,
- Once ghee melts, add almonds, raisins, wet coconut, saute till light golden
- Add cooked crack wheat, mix well, saute for 1-2 min
- Add jaggery, mix well, cook till jaggery melts completely
- Add milk in batches, stir well
- Cook for 4-5 min on low
- Kheer is ready to serve
- Now lets work on garnishing,
- Take a pan, add 1 tbsp ghee, let it melt
- Add split cashews, saute till golden
- Add sautéed cashes on khmer
- Sprinkle some fine chopped pistachios and wet coconut
- Top with kesar
- Yummy healthy kheer is ready!
Tips
- Broken wheat used for this recipe reduces steps and time compared to traditional Gavhachi / Gehu / Whole wheat kheer
- For more sweetness add 4/1 cup more jaggery
- For more creaminess use reduced milk instead of regualr milk
- Adjust thickness by adding milk before serving
