Ingredients
- दूध | Milk – 2 ltr
- Vinegar – 2 tbsp
- साखर / शक्कर / Sugar – 6 tbsp
- Strawberry Jam – 2 tbsp
Preparation
- Bring 1.5 qtr milk to boil on medium heat, stir regularly to avoid sticking at bottom
- Mix vinegar with 2 tbsp water
- Once milk boils, vinegar mix little at a time
- Milk will start to curdle, continue to cook for 1-2 min, you will see water and milk solids separates completely. Turn off the heat
- Drain curdled milk using cheese / muslin cloth, you will be left with paneer / chenna
- Rinse the paneer with cold water, that will help with washing out vinegar sourness and smell
- Collect all the edges of cloth together and squeeze out excess water from paneer
- Set aside for 25-30 min, to drain any leftover water
- Now bring half liter milk to boil, and continue to cook till it reduces to half
- Add sugar in 2 tbsp batches, mix well
- Once sugar dissolves, add paneer / chenna, mix well
- Cook till it thickens, turn off heat and let it cool down
- Take half of chenna in a pan, add 2 tbsp strawberry jam, cook till it is mixed well. Let it cool down
- Take strawberry mawa, knead it well to smoothen, make a dough
- Take a parchment paper, put strawberry dough and cover with another parchment paper , roll it flat and thin, set aside
- Now take white mawa, knead to make smooth dough
- Take a parchment paper, put white dough on top and cover with another parchment paper, roll it flat and thin sheet, set aside
- Now place strawberry sheet over white sheet, and roll it together
- Cut in desired size slices
Tips
- To remove vinegar smell and taste, wash curdled milk with cold water
- Knead well to get smooth dough and avoid cracking
- Removing excess water from chenna before using to make mawa is important
- Adding sugar in batches reduces time to get thick milk
