Ingredients

  • दूध | Milk – 2 ltr 
  • Vinegar – 2 tbsp
  • साखर / शक्कर / Sugar – 6 tbsp
  • Strawberry Jam – 2 tbsp

Preparation

  1. Bring 1.5 qtr milk to boil on medium heat, stir regularly to avoid sticking at bottom
  2. Mix vinegar with 2 tbsp water
  3. Once milk boils, vinegar mix little at a time
  4. Milk will start to curdle, continue to cook for 1-2 min, you will see water and milk solids separates completely. Turn off the heat
  5. Drain curdled milk using cheese / muslin cloth, you will be left with paneer / chenna
  6. Rinse the paneer with cold water, that will help with washing out vinegar sourness and smell
  7. Collect all the edges of cloth together and squeeze out excess water from paneer
  8. Set aside for 25-30 min, to drain any leftover water
  9. Now bring half liter milk to boil, and continue to cook till it reduces to half
  10. Add sugar in 2 tbsp batches, mix well
  11. Once sugar dissolves, add paneer / chenna, mix well
  12. Cook till it thickens, turn off heat and let it cool down
  13. Take half of chenna in a pan, add 2 tbsp strawberry jam, cook till it is mixed well. Let it cool down
  14. Take strawberry mawa, knead it well to smoothen, make a dough
  15. Take a parchment paper, put strawberry dough and cover with another parchment paper , roll it flat and thin, set aside
  16. Now take white mawa, knead to make smooth dough
  17. Take a parchment paper, put white dough on top and cover with another parchment paper, roll it flat and thin sheet, set aside
  18. Now place strawberry sheet over white sheet, and roll it together
  19. Cut in desired size slices

Tips

  1. To remove vinegar smell and taste, wash curdled milk with cold water
  2. Knead well to get smooth dough and avoid cracking
  3. Removing excess water from chenna before using to make mawa is important
  4. Adding sugar in batches reduces time to get thick milk

How to serve

  1. Serve fresh
  2. Store in refrigerator for 2-3 days
