Ingredients Green Vangi Masala

  • तेल / Oil – 5 tbsp
  • लसुन / लेहसुन / Garlic – 10-12
  • मिरची / Green Chili – 7-8
  • खोब्र / नारियल / Dry Coconut – 1/4 cup
  • खसखस / Poppy seeds – 1 tsp
  • कांदा / प्याज / Onion (chopped) – 1
  • कोथंबीर / धनिया / Coriander – 1/4 cp
  • वांगी / बैंगन / Brinjal – 5-6
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • Water – 1 cup
  • मीठ / नमक / Salt – as per taste

Making Green Vangi Masala

  1. Heat 3 tbsp oil in a pan
  2. Add garlic, chili, coconut cut, poppy seeds, sauté for 2-3 min
  3. Add onion, mix well, sauté till onion is soft
  4. Add coriander, mix well, turn off heat and let it cool down
  5. Once cooled, grind to fine paste
  6. Take brinjal, wash, clean and dry
  7. Slit all brinjal at 4 places
  8. Now heat 2 tbsp oil in pot, add slit brinjal, sauté brinjal for 2-3 min
  9. Now add grinder green masala, mix well, sauté for 1 min
  10. Add turmeric, mix well
  11. Add 1 cup water, use some of the water to rinse masala paste from grinder(optional)
  12. Add salt to taste, mix well
  13. Cover and cook for 7-8 min, mix occasionally
  14. Tasty Green Brinjal curry is ready!

Tips

  1. Poppy seeds gives gravy thickness
  2. Fine masala paste gives the curry smooth texture
  3. This gravy does not need any masala,
  4. Onion-corainder based gravy gives brinjal a unique tastes

How to serve

  1. Serve Hot!
  2. Serve with bhakari, roti, rice
