Ingredients

  • दोडके / तुरई / Ridge gourd (Luffa) – 1
  • तूर डाळ / तुवर दाल / Pigeon pea – 2/3 cup
  • मसूर डाळ / Red Lentil – 1/3 cup
  • तेल / Oil – 3 tbsp
  • मोहरी / राई / Mustard seeds – 1 tsp
  • हींग / Asafoetida – a pinch
  • जीर / जीरा / Cumin seeds – 1 tsp
  • िमरची / Green Chili (fine chopped)- 3-4
  • कढीपत्ता / Curry leaves – 8-10
  • अदरक / Ginger (grated) – 1 tsp
  • लसुन/ लेहसुन / Garlic (fine chopped)- 4-5
  • टमाटर / Tomato – 1
  • हळद / हल्दी / Turmeric – 1 tsp
  • मीठ / नमक / Salt – as per taste
  • ितखट / लाल िमर्च / Chili powder – 1tsp
  • कोथंबीर / धिनया पत्ता / Coriander

Making Turai Dal-Fry

  1. Take a ridge gourd / Turai / Dodke, peel all the ridges
  2. Wash toor daal/ Pigeon peas and red lentils / masoor daal together well
  3. Add washed lentils to pressure cooker, add 3 cups of water, add 1 cup of chopped gourd, close the lid and pressure cook for 3 whistles. Once cooked let it cool down
  4. Now heat oil in a pot
  5. Add mustard, cumin seeds, let it splutter
  6. Add asafoetida / hing
  7. Add green chilies, curry leaves, ginger, garlic and sauté for 30 sec
  8. Add tomato, sauté for 1 min
  9. Add turmeric, remaining chopped gourd, chili powder, coriander mix well, cover and cook till gourd cooks, takes about 2-3 min
  10. Add cooked lentil, mix well, simmer for 2-3 min
  11. Tasty Turai Dal-Fry is ready!

Tips

  1. You can also use moong dal instead of red lentils / masoor daal
  2. Pressure cooking gourd with lentil infuses the test well
  3. Adjust water to get desired thickness
  4. Serve with Roti, Chapati, Rice
