Ingredients – Vadi / Muthiya

  • दूधी भोपाळा / Bottle Gourd – 1
  • रवा / सूजी / Sooji – 1/4 cup
  • बेसन / Gram flour – 1 cup
  • गहु पीठ / गेहू आटा / Wheat flour- 1 cup
  • कोथंबीर / धिनया / Coriander – 1/4 cup
  • मिर्ची / Green Chili – 1 tbsp
  • अदरक / Ginger – 1/2 tbsp
  • जीर / जीरा / Cumin seeds – 1/2 tbsp
  • मीठ / नमक / Salt – as per taste
  • बडीशेप / सौंफ / Fennel seeds (Powder) – 1/2 tbsp
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • साखर / शक्कर / Sugar – 1 tbsp
  • कसूरी मेथी / Dry Fenugreek leaves- 1 tbsp
  • लिंबू / नींबू / Lime juice – 1 tbsp
  • तेल / Oil – 1 tbsp
  • दही / Curd – 3 tbsp

Making Vadi / Muthiya

  1. Peel and grate bottle gourd, leave out the center part of gourd,
  2. Add sooji, gram flour, wheat flour, chopped coriander, green chili, ginger, cumin seeds, salt to taste, fennel seeds powder, turmeric, sugar, dry fenugreek leaves, lime juice, oil, mix well.
  3. Cover and set aside for 15 min, in mean time prepare steamer
  4. After 15 min, add curd, mix well and make a dough
  5. Grease hands, take a portion and give it a cylinder shape
  6. Add them to steamer, steam for 20-25 min
  7. After steaming, let it cook down completely
  8. Cut in thin slices, Muthiya is ready!

Ingredients – Tadka

  • तेल / Oil – 2 tbsp
  • मोहरी / राई / Mustard seeds – 1 tsp
  • हींग / Asafoetida – a pinch
  • मिर्ची / Green Chili (sliced) – 2-3
  • कढीपत्ता / Curry leaves – 10-12
  • तीळ / तील / Sesame seeds – 1 tbsp
  • खोब्र / नारियल / Coconut desiccated- 1 tbsp

Making Tadka

  1. Heat oil in a pan on medium, add mustard, asafetida (hing), green chili, curry leaves, sauté till chilis are done
  2. Add sesame seeds, sauté for 30 sec
  3. Add sliced vadi/muthiya to pan, mix well
  4. Saute for 3-4 min, turn occasionally to get light golden crispy vadis / muthiya
  5. Add coconut, mix well,
  6. Muthiya is ready!

Tips

  1. Mostly water not needed to make dough, if needed use little at a time
  2. Steamed vadi / muthiya can be served as well
  3. Airfry or bake for 10 min at 425 F / 220 C
  4. Serve with Ketchup / Chili sauce

How to serve

  1. Serve Hot!
  2. Serve as breakfast
