Ingredients – Cake
- मैदा / White flour – 2 cups
- मीठ / नमक / Salt – 1/4 tsp
- Baking powder – 2 tsp
- बेकिंग सोडा / Baking Soda – 1/2 tsp
- साखर / शक्कर / Sugar – 1 cup
- दही / Curd – 1 cup
- Orange zest – 1 tsp
- बटर / Butter – 1/4 cup
- संत्रा / Orange juice – 1 cup
- Chocolate chips – 1 cup
- Fresh cream – 1 cup
Baking cake
- Take white flour, baking powder, baking soda and salt and sieve them to remove all lumps
- In mixing bowl add fine grain sugar and thick room temperature curd, whisk well until sugar dissolve completely
- Add one tbsp fresh orange zest in it mix well
- Add melted butter in it and whisk until everything mix well
- Now add flour-mix in batches, little at time and mix gently
- Add orange juice in it and mix well, also adding batches
- Take square cake tin and grease with butter and place parchment paper
- Now pour batter in cake tin, tap cake tin 2-3 times to remove air bubbles
- Preheat oven on 340 degree Fahrenheit or 170 degree Celsius
- Place cake tin in preheated oven for 40-50 min, after 45 min check with toothpick comes clean
- Once cake done remove cake tin, let cool for 5-10 min, demold cake from tins and let the cakes cool completely on metal rack
- Remove edges, cut in half, then horizontally to make about 1/2 in slice
- In Mixing bowl take chocolate chips and melt them in microwave 30 sec, mix well. If needed repeat
- Add 1/4 cup fresh cream and mix well, chocolate ganache is ready, set aside
- Take 1/2 cup fresh cream, whisk till light and fluffy, set aside for decoration
Layering cake
- On flat base apply little ganache, place one cake slice,
- Pour 1-2 tsp orange juice all over the cake slice
- Apply thin chocolate ganache on cake slice
- Place another cake slice and again apply orange juice and chocolate ganache, and repeat for 4-5 slices
- Apply thick layer chocolate ganache on top layer, smoothen it with knife, you can dip knife in hot water to help with layering
- Fill chocolate ganache in piping bag, decorate cake to your liking
- Fill whipped cream in piping bag, decorate cake to your liking
Tips
- Seiving dry ingredients is important to get lump free batter
- Tapping cake tin is important to remove air gaps
- Microwave chocolate fudge if it gets hard during layering
- You can divide batter in two batches depending on tin size
