Ingredients – Cooking Mutton
- मटन / Mutton – 1 kg / 2 pounds
- अदरक / Ginger – 1/2 inch
- लसुन / लेहसुन / Garlic – 3-4 cloves
- कोथंबीर / धनिया / Coriander
- मिरची / Green chili paste- 3-4 pieces
- तेल / Oil – 1 tbsp
- दालचीनी / Cinnamon – 1 inch
- मोटी इलायची / Black Cardamom – 1
- इलायची / Cardamom – 2
- लवंग / लौंग / Clove – 2
- मीरे / काली िमर्च / Black peppers – 4
- कांदा / प्याज / Onion – 1 cut
- हळद / हल्दी / Turmeric – 1 tsp
- मीठ / नमक / Salt – as per taste
- दही / curd – 1 tbsp
- पाणी / Water – 2 cups
Cooking Mutton
- Wash Mutton throughly
- In grinding jar add ginger, garlic, coriander, green chilis and make fine paste, keep aside
- Heat cooker on medium heat, add 1 tbsp oil
- Add whole spices cinnamon, masala cardamom, green cardamom, cloves, peppercorn sauté for 30 sec
- Add onion, mix well, cook for 1-2 min
- Add 1 tsp green paste sautés again for 1-2 min
- Add Turmeric and mutton mix well, add salt and 1 tbsp curd. Cover and cook for 5-6 min, mix well and cover again, cook for 5-6 min more
- Add 2-3 cups water mix well, close cooker lid and pressure cook mutton for 5-6 whistles, turn of heat
- Set aside cooked mutton
Ingredients – Masala
- खोब्र / नारियल / Dry whole Coconut – 1/2
- कांदा / प्याज / Onion – 3 small
- अदरक / Ginger – 1/2 inch
- लसुन / लेहसुन / Garlic – 3 cloves
- काजू / Cashew Roasted – 10-12
- अदरक / Ginger – 1 inch
- लसुन / लेहसुन / Garlic – 6,7
- तिखट / लाल मिर्च / Chili powder- 1tsp
- गरम मसाला / Garam Masala – 1 tsp
Making Masala
- Take small size onion cut end parts, discard outer layer and slit onions in cross
- Keep grilling rack on flame and roast onion directly on flame until become black outside and gets cooked inside, turn them occassinally for even cook
- Similarly roast coconut pieces directly on flame, turn occasionally to get even cook
- Heat pan on medium add cashew and dry roast them
- Now discard all outer burn part of onion and coconut and cut them into small pieces
- Take grinding jar add roasted cashew and roasted coconut, grind to fine powder
- Now in same grinding jar add ginger, garlic, roasted onion, chili powder, garam masala powder
- Grind to fine paste using little water,
- Set aside
Ingredients – Curry
- तेल / Oil – 4 tbsp
- Prepared Masala Paste
- Cooked Mutton with stock
- मीठ / नमक / Salt – as per taste
Making Curry
- Heat deep pot on medium add 4 tbsp oil
- Add remaining coriander chili paste, sauté for a min in oil
- Now add roasted masala paste, mix well and cook masala nicely until oil separate
- Once oil separates and little water and mutton stock, bring it to boil
- Now add pressure cooked mutton pieces
- Simmer till oil appears on top
- Super tasty black mutton is ready
Tips
- Roasted onion coconut on flame gives this curry a unique flavor
- Grind masala fine to get nice smooth gravy
- Adjust pressure cooker whistle as per mutton type
- Cooking Masala well till oil separation is an important step for nice flavor
