Ingredients – Shev Bhaji

  • तेल / Oil – 3 tbsp
  • कांदा / प्याज / Onion chopped – 1
  • लसुन / लेहसुन / Garlic – 4-5 cloves
  • अदरक / Ginger – 1 inch
  • खोब्र / नािरयल / Dry Coconut grated – 1/2 cup
  • दालचीनी / Cinnamon – 1 inch
  • तमालपत्र/ तेज़पत्ता / Bayleaf – 1
  • इलायची / Cardamom – 1
  • मोटी इलायची / Black Cardamom – 1
  • कढीपत्ता / Curry leaves – 8-10
  • मोहरी / राई / Mustard seeds – 1/2 tsp
  • जीर / जीरा / Cumin seeds – 1/2 tsp
  • हींग / Asafoetida – 1/4 tsp
  • कांदा / प्याज / Onion chopped – 1
  • टमाटर / Tomato cut – 1
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • धने/ धनिया / Coriander powder – 2 tsp
  • जीरेपूड / जीरा / Cumin powder – 1tsp
  • गरम मसाला / Garam Masala – 1 tsp
  • तिखट / लाल मिर्च / Chili powder- 1 tbsp
  • जाड शेव / मोटा सेव / Spicy thick Sev
  • कोथंबीर / धिनया / Coriander

Making Shev Bhaji

  1. Heat pan on low to medium
  2. Add 1 tbsp oil, add chopped onion sauté them till soft
  3. Now add garlic, ginger and grated dry coconut roast everything till light brown turn of heat and cooled down
  4. Once cooled down grind it to fine paste use little water for this, keep masala paste a side
  5. Heat deep pan on medium, add 2-3 tbsp oil, add cinnamon sticks, bay leaf, masala cardamom and green cardamom sauté for 30 sec
  6. Add mustard seeds cumin seeds and asafetida once seeds cracked, curry leaves, mix well
  7. Add finely chopped onion sauté till soft
  8. Add roasted masala paste, sauté till oil seprates
  9. Add finely chopped tomato, mix well, cook till tomato softens and oil separates again
  10. Add turmeric, coriander powder, cumin powder, garam masala, chili powder, mix well
  11. Now add water to get desired gravy consistency, simmer for 2-3 min
  12. Add spicy thick sev to the gravy, simmer for additional 1-2 min
  13. Garnish with coriander,
  14. Spicy Sev curry is ready!

Tips

  1. Roasted onion-coconut masala gives nice thickness and flavor to gravy
  2. If needed use little water while grinding masala
  3. Spicy thick sev are best suited for this recipe

How to serve

  1. Serve hot
  2. Serve with Roti, naan, chapati, jeera rice
