Ingredients – Brinjal Masala
- शेंगदाने / मूंगफल्ली / Peanuts – 1/2 cup
- खोब्र / नारियल / Grated dry Coconut – 1/2 cup
- धने / धिनया / Coriander powder- 2 tbsp
- जीर / जीरा / Cumin seeds – 1 tsp
- कांदा / प्याज / Onion – 1 chopped
- लसुन / लेहसुन / Garlic – 4-5 chopped
- अदरक / Ginger paste – 1 inch
- कढीपत्ता / Curry leaves – 8-10
- कोथंबीर / धनिया पत्ता / Coriander leaves for filling
- तिखट / लाल मिर्च / Chilli powder – 1 tbsp(medium spicy)
- गरम मसाला / Garam Masala – 1 tsp
- मीठ / नमक / Salt – as per taste
- वांगी / बैंगन / Brinjal – 8-10 slit
- तेल / Oil – 3 tbsp
- हळद / हल्दी / Turmeric – pinch
- Water – 1-2 cups
- कोथंबीर / धनिया पत्ता / Coriander for garnishing
Instructions
- Heat pan on medium, add peanuts dry roast them until well done and crispy, once done remove and keep aside
- Now add grated coconut, roast till golden, once done remove and keep aside
- Now add coriander seeds and cumin seeds dry roast them until crispy and aromatic, once done remove and keep aside
- Now add finely chopped onion and few drops of oil and roast onion till brown, once done remove and keep aside
- Take grinding jar add all roasted ingredients, garlic, ginger, curry leaves, coriander leaves, chili powder, Garam Masala, salt grind all together to paste
- Wash and dry small size brinjals, slit brinjals in cross
- Stuff grinder masala in brinjals
- Heat pan on medium heat add oil and pinch of turmeric, mix well
- Placed all stuffed brinjals in pan cook for 2 min on low-med heat
- Turn all brinjals and cook them again for 2 min
- Add little water cover and cook until brinjals soft, turn in between
- Delicious Bharwan brinjal is ready!
How to serve
- Serve hot!
- Serve with Chapati, Roti, Naan
Tips
- Small brinjal are best suited for this recipe
- Roast peanuts untill crunchy for best flavor
- For semi-gravy consistency, add little water
