Dhaba Style Chicken | ढाबा चिकन

Ingredients – Marinating Chicken

  • चिकन / Chicken – 1 kg
  • तिखट / लाल मिर्च / Chili powder- 1tsp
  • लिंबू / नींबू / Lime juice – 1 tsp
  • मीठ / नमक / Salt – 2 tsp
  • दही / Curd – 1/4 cup

Marinating chicken

  1. Wash Chicken throughly
  2. Marinate Chicken with chili powder, lime juice, salt, and curd. Mix well
  3. Set aside for 10-15 min

Ingredients – Making chicken

  • तेल / Oil – 4 tbsp
  • दालचीनी / Cinnamon – 1 inch
  • मोटी इलायची / Black Cardamom – 1
  • इलायची / Cardamom – 2
  • लवंग / लौंग / Clove – 3
  • मीरे / काली िमर्च / Black peppers – 4
  • मिरची / Green Chili – 2
  • कांदा / प्याज / Onion finely chopped – 2
  • बेसन / Gram flour – 1 tbsp
  • टमाटर / Tomato puree – 1 cup
  • जीरेपूड / जीरा / Cumin powder – 1tsp
  • धने/ धिनया / Coriander powder – 1 tbsp
  • गरम मसाला / Garam Masala – 1 tsp
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • बडीशेप / सौंफ / Fennel seeds powder-1/2 tsp
  • मेथी दाना/ Fenugreek powder – 1/4 tsp
  • लसुन / लेहसुन / Garlic paste – 1 tbsp
  • अदरक / Ginger paste – 1 tbsp
  • तिखट / लाल मिर्च / Chilli powder – 1 tbsp
  • Marinated chicken
  • कोथंबीर / धनिया  पत्ता / Coriander

Making Chicken

  1. Heat deep pot on medium heat
  2. Add oil once oil heats add cinnamon, cardamom, clove, black pepper sauté till arroamatic
  3. Add green chili and onion, sauté till onion is soft
  4. move all onion to one side in pot, add gram flour to the pot, sauté till gram flour is golden, then mix it well with onion
  5. Add tomato puree, mix well, then cook till tomato cooks
  6. Add cumin powder, coriander powder, Garam Masala, turmeric, fennel seeds powder, fenugreek powder, mix well
  7. Add garlic paste, ginger paste, mix well, sauté for 1-2 min
  8. Add chili powder, mix well
  9. Add chicken, mix well.
  10. Cover and cook till chicken desired tenderness, add little water to help with cooking
  11. Garnish with coriander!
  12. Dhaba style Chicken is ready!

Tips

  1. Use cashew/almond powder as an alternative to gram flour/besan
  2. Adjust water level for gravy consistency of your liking
  3. Cook time may vary depending on the type of chicken used
  4. Serve with Roti, Naan, Chapati, Rice

How to serve

  1. Serve hot
  2. Serve with roti, rice, chapati, bhakari
