Ingredients Marination

  • लसुन / लेहसुन / Garlic – 10-12 cloves
  • अदरक / Ginger – 2 inch
  • मिरची / Green Chili – 5-6
  • पुदीना / Mint leaves – 4-5
  • कोथंबीर /धिनया / Coriander – 1/4 cup
  • टमाटर / Tomato – 1
  • कांदा / प्याज / Onion chopped – 1
  • Mutton – 1 kg
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • मीठ / नमक / Salt – 3 tsp /as per taste
  • तिखट / लाल मिर्च / Chili powder – 3 tsp
  • Biryani Masala – 4 tbsp
  • दही / Curd – 1/4 cup

Marinating Mutton

  1. Grind garlic, ginger, chili, mint leaves, coriander leaves, tomato, onion together and make fine paste
  2. Take Mutton in a mixing bowl, add turmeric, salt, chili powder, biryani masala and curd, mix well,
  3. Cover and set aside for 30 min

Ingredients – Biryani

  • तेल / Oil – 4 tbsp
  • जीर / जीरा / Cumin seeds – 1 tsp
  • Marianted mutton
  • तांदूळ / चावल / Rice – 2 cup
  • तेल / Oil – 1 tbsp
  • कोथंबीर / धनिया / Coriander chopped
  • पुदीना / Mint leaves chopped – 5-6
  • Fried Onion 1/2 cup
  • Red color – few drops (Optional)
  • Kesar milk (2 tbsp milk + a pinch kesar)

Making Biryani

  1. Take pressure cooker, add oil, heat on medium
  2. Add cumin seeds, sauté till cooked
  3. Add marinated mutton, mix well, cover and pressure cook till mutton is soft, it takes about 7-8 whistles
  4. Soak rice for 20 min,
  5. Once mutton is cooked, and pressure cooker cools down, stir the cooked mutton well
  6. Boil water in deep pot, add soaked rice to boiling water, cook till rice is half done, remove half cooked rice
  7. Add about half the rice over cooked mutton to pressure cooker, spread even, add about 1/4 cup fried onions on top, add coriander leaves and mint leaves
  8. Add remaining rice on top and spread evenly, add red color drops(optional), add another layer of fried onion and coriander leaves. add Kesar milk on top
  9. Close the pressure cooker
  10. Now place a wide pan on burner, and place pressure cooker on top, cook for 25-30 min
  11. Biryani is ready! mix gently, serve Hot!

How to serve

  1. Serve hot!
  2. Serve with riata

Tips

  1. Adjust pressure cooker whistles per mutton type
  2. Readymade fried onions can also be used
  3. Adjust spice level to your liking
  4. Using tava under cooker helps avoid burning at bottoms
