Ingredients – Spicy Sev

  • बेसन / Gram flour – 1 cup
  • ओवा / अजवाइन / Ajwain – 1/2 tsp
  • हींग / Asafoetida – a pinch
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • मीठ / नमक / Salt – as per taste
  • तेल / Hot Oil – 1 tsp
  • तिखट / लाल मिर्च / Chili powder – 1 tbsp
  • तेल / Oil for frying

Making Spicy Sev

  1. Take a mixing bowl, sieve gram flour
  2. Add ajwain, asafoetida, turmeric, salt to the gram flour, mix well
  3. Add hot oil to the gram flour, mix well and run oil with flour throughly, this is important step to get crispy sev
  4. Add chili powder, mix well
  5. Add little water at a time to make loose dough, set aside for 10-15 min
  6. Now prepare sev maker machine, grease and fill with dough
  7. Heat oil on medium, and drop sev evenly in hot oil, turn when bottom side is done.
  8. Fry both sides till crispy
  9. Spicy Sev are ready!

Ingredients – Mint Sev

  • अदरक / Ginger peeled – 1 inch
  • मिरची / Green Chili – 10-12
  • पुदीना / Mint leaves – 1/4 cup
  • कोथंबीर / धनिया पत्ता / Coriander – 1/4 cup
  • काळ मीठ/कला नमक/ Pink Salt – 1/2 tbsp
  • Citric acid – 1 tsp
  • जीरेपूड / जीरा / Cumin powder – 1 tsp
  • बेसन / Gram flour – 1 cup
  • तेल / Hot Oil – 2 tsp
  • Dry Mint powder 1/2 tsp
  • मीठ / नमक / Salt – 1/2 tsp as per taste
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • ओवा / अजवाइन / Ajwain – 1/4 tsp
  • तेल / Oil for frying

Making Mint Sev

  1. Grind ginger, chili mint leaves, coriander, pink salt, citric acid, cumin powder together to fine paste, use little water to help with grinding
  2. Add 1/2 cup water to the mint paste, and strain the puree and collect green mint water
  3. Now take mixing bowl, sieve gram flour
  4. Add hot oil, rub oil with gram flour throughly
  5. Sieve mint powder in the flour, add salt, turmeric, ajwain, mix well
  6. Use green mint water to make loose dough
  7. Now prepare sev maker tool, grease and fill with dough, set aside for 10-15 min
  8. Heat oil on medium and drop sev evenly in hot oil, turn when bottom side is done
  9. Fry both sides till crispy
  10. Green mint Sev are ready!

Tips

  1. Makes 4 swirls of sev in 1 cup flour
  2. Rubbing hot oil with flour throughly helps get crispy sev
  3. Fry on medium heat
  4. If needed add green color

How to serve

  1. Serve hot / cold
  2. Serve as tea time snack
  3. Store in airtight container for prolonged crispness
