Ingredients : Methi Mathari
- पीठ/ आटा / Chapati Flour – 1 cups
- रवा / सुजी / Semolina – 1/2 cup
- मैदा / White flour – 1/2 cup
- ओवा / अजवाइन / Ajwain -1/2 tsp
- कलोंजी / Nigella seeds – 1/2 tsp
- मीरे पूड / काली मिर्च/ Pepper powder – 1/4 tsp
- मीठ / नमक / Salt – 1 tsp
- तूप / घी / Ghee – 2 tbsp
- Oil for frying
Instructions – Sweet Shankarpali
- Take mixing bowl, add wheat flour, sooji, white flour, Ajwain/carom seeds, nigella seeds, pepper powder, salt, kasoori methi, mix well
- Now add hot ghee, mix well, rub ghee with flour for 4-5 min
- Add little water at a time, mix well, knead to tight dough, required around 1/2 cup water
- Cover and set aside for 25-30 min
- After 30 min, divide dough in small pieces
- Now take one piece smooth by rolling in palms and spread it flat on fork press it and roll backwards
- Repeat for all pieces
- Heat oil for frying on low-medium, drop mathari pieces in oil, turn occassionally to get even cook
- Fry till light golden and crispy
Ingredients : Masala Mathari
- मैदा / White flour – 2 cup
- मीठ / नमक / Salt – 1/2 tsp
- जीर / जीरा / Cumin seeds – 1/2 tsp
- हळद / हल्दी / Turmeric – 1/4 tsp
- तिखट / लाल मिर्च / Chilli powder -1/2 tsp
- काळ मीठ / कला नमक / Pink Salt – 1 tsp
- Citric acid – 1/2 tsp
- साखर / शक्कर / Sugar – 1/4 tsp
- ओवा / अजवाइन / Ajwain / Carrom seeds – 1/4 tsp
- कसूरी मेथी / Dried fenugreek leaves-1 tspsesame
- तीळ / तील / Sesame seeds -1 tsp
- तेल / Hot Oil – 3 tbsp
- Oil for frying
Instructions – Salty Shankarpali
- Take white flour in mixing bowl, add salt, cumin seeds, turmeric powder, chili powder, pink salt, citric acid, sugar, carom seeds, dry fenugreek leaves, sesame seeds mix well
- Now heat the oil, add hot oil to flour, mix with a spoon to handle hot oil, now rub oil with flour and make sure there are no lumps
- Use little water at a time to make dough, make a tight dough
- Cover and rest dough for 30 min
- Now make 5-6 equal portion, take one portion roll the dough flat and make thin roti
- Spread little oil on roti and dust with little flour
- Now roll the chapati to pipe and roll-stretch a little with palms
- Cut roll in small pieces, roll each roll to flat

- Heat oil for frying on low-medium, drop mathari in oil, turn ocassinally to get even cook
- Fry till light golden
- Masala mathari are ready!
Tips
- Rubbing hot oil/ghee with flour throughly helps get crispy and khasta mathari
- Fry on low- med heat to get even cook from inside
- Make mathari design of your choice
- Store in airtight container for prolonged crispness
