Ingredients – Chivda / Mixture
- साखर/शक्कर / Powdered Sugar- 2 tbsp
- काळ मीठ/काला नमक/ Pink Salt – 1/2 tsp
- Citric acid – 1/4 tsp
- जीरेपूड / जीरा / Cumin powder – 1/4 tsp
- मीठ / नमक / Salt – as per taste
- कागदी पोहे / पतला पोहा / Thin Rice flakes- 200 gms
- तेल / Oil – 4 tbsp
- खोब्र / नािरयल / Dry Coconut sliced- 1/4 cup
- शेंगदाने / मूंगफल्ली / Peanuts – 1/4 cup
- डाळ्या / Daria split – 1/4 cup
- िमरची / Green Chili sliced- 5/6
- मोहरी / राई / Mustard seeds – 1 tsp
- जीर / जीरा / Cumin seeds – 1 tsp
- लसुन / लेहसुन / Garlic – 2-3 cloves
- कढीपत्ता / Curry leaves – 12-15
- हळद / हल्दी / Turmeric – 1 tsp
Making Chivda / Mixture
- Take a mixing bowl, add sugar, pink salt, citric acid, cumin powder, salt and mix well. Seasoning mix is ready! set aside
- Sieve poha to remove small pieces, sieve small quantity at a time
- Now take a large pan /pot, roast poha in batches till crisp
- Heat oil for frying on medium, add coconut slices, fry till golden, remove from oil, add to roasted poha
- In the same oil, add peanuts, fry till crispy, remove from oil and add to roasted poha
- In the same oil now add Daria/ dalya, roast till crisp, remove from oil and add to roasted poha
- Now add green chili to same oil, fry till crispy, remove from oil and add to roasted poha
- Now add mustard seeds, cumin seeds, to same oil, let the mustard seeds splutter, add garlic, curry leaves and fry till both turn crispy
- Add turmeric, mix well
- Now pour this mix on roasted poha, add half of seasoning mix on poha, mix everything together, toss gently moving from bottom to top
- Now add remaining seasoning mix, toss again to get even yellow color to all poha
- Roast and toss the chivda gently on low heat for 2-3 min to get nice crispiness
- Poha chivda is ready!
Tips
- Roast on low and turn continuously to avoid burning poha
- Toss gently from bottom to top to avoid breaking rice flakes
- Fry chilis and curry leaves to crisp, or it may affect Chivda mix crispness
- You can also add fried onion, shev to Chivda
