Ingredients : Sweet Shankarpali

  • मैदा / White flour – 2 cups
  • मीठ / नमक / Salt – 1/4 tsp
  • तूप / घी / Ghee – 1/4 cup
  • साखर/शक्कर/ Powdered Sugar – 1/2 cup
  • दूध / Milk – 1/2 cup
  • Oil for frying

Instructions – Sweet Shankarpali

  1. Take white flour in mixing bowl, add salt, mix well
  2. Now add ghee, mix well, rub ghee with flour for 4-5 min
  3. Add sugar, mix well
  4. Add little milk at a time, mix well, knead to tight dough
  5. Cover with a cloth and set aside for 30-40 min
  6. After 30 min, divide dough in half, roll to make it flat, quarter fold and roll again to flat thick roti
  7. Now cut in small square or diamond shape pieces
  8. Frying
    1. Heat oil for frying on medium, drop cut shankarpali in oil, turn continuously to get even cook
    2. Fry till golden
    3. Sweet Shankarpali are ready!
  9. Baking
    1. Spread small pieces on baking tray
    2. Heat oven on 375° C or 180° F
    3. Bake for 10 min, turn half way through
    4. Baked Shankarpali are ready!

Ingredients : Salty Shankarpali

  • मैदा / White flour – 1 cup
  • मीठ / नमक / Salt – 3/4 tsp
  • साखर/शक्कर/ Powdered Sugar – 1/2 tsp
  • ओवा / अजवाइन / Ajwain – 1/4 tsp
  • जीर / जीरा / Cumin seeds – 1/2 tsp
  • कलोंजी / Nigella seeds – 1/2 tsp
  • तेल / Hot Oil – 2 tbsp
  • Oil for frying

Instructions – Salty Shankarpali

  1. Take white flour in mixing bowl, add salt, powdered sugar, ajwain, cumin seeds, nigella seeds mix well
  2. Now heat the oil, add hot oil to flour, mix with a spoon to handle hot oil, now rub oil with flour and make sure there are no lumps
  3. Use little water at a time to make dough, make a medium dough
  4. Cover and rest dough for 30 min
  5. Now roll the dough flat, cut in small diamond shape pieces
  6. Heat oil for frying on medium, drop cut shankarpali in oil, turn continuously to get even cook
  7. Fry till light golden
  8. Salty shankarpali are ready!

Tips

  1. Rubbing flour with ghee and oil is important to get khasta / flaky shankardas
  2. Sweet shankarpali dough can also be made with water/half-half milk
  3. Fry on medium heated oil till light golden color, to cook shankarpali well from inside
  4. Nigella seeds/Kalonji are optional for salty shankarpali
  5. Store in airtight container to maintain crispiness
