Ingredients – Chakali Bhajni

  • तांदूळ / चावलं / Rice – 2 cups
  • चना दाळ / Split Gram – 1 cup
  • उळीद दाळ / Blackgram lentil – 1/2 cup
  • मूंग दाळ / Moong dal – 1/3 cup
  • जीर / जीरा / Cumin seeds – 3 tbsp
  • धने/धिनया/ Coriander seeds – 6 tbsp

Making Chakali bhajni

  1. In bowl take rice, wash rice 2-3 time with water and put washed rice in sieve to strain all water
  2. Follow step 1 for chana dal, urad dal and moong dal as well
  3. Now spread dry cotton cloth, spread rice evenly on dry cloth and let it air dry completely
  4. Follow step 3 for Chana dal, urad dal and moong dal
  5. Take wide and heavy bottom pan, heat on medium
  6. Roast rice on low-medium heat, till get dry completely from inside and slightly change in color, it takes around 9-10 min, Once done keep rice side to cool down
  7. Similarly Roast chana dal on low heat till dry and crunchy from inside, it takes around 7-8 min, Once done keep it side with rice and let it cool
  8. Now roast urid dal and then moong dal on low heat, till crunchy and dry inside, let it cool down
  9. Now dry roast coriander seeds and cumin seeds on low heat till aromatic
  10. Once everything cooled, mix and grind to fine flour in batches, sieve to get super fine flour
  11. Chakali bhajani is ready
  12. This makes 4-5 cup Chakali Bhajani

Ingredients – Chakali

  • Chakali Bhajani / flour – 1 cup
  • मीठ / नमक / Salt – as per taste
  • ितखट/लाल िमर्च / Chili powder- 1 tsp
  • तीळ / तील / Sesame seeds – 1 tsp
  • ओवा / अजवाइन / Ajwain – 1/4 cup
  • हींग / Asafoetida – a pinch
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • तूप / घी / Melted Ghee- 1 tsp
  • तेल / Oil – frying

Making Chakali

  1. Take mixing bowl add one cup of chakali bhajani / flour
  2. Add salt, chili powder, sesame seeds, ajwain, asafetida, turmeric powder, mix all together
  3. Add melted ghee and mix it throughly
  4. Add water and knead medium dough, it takes around half cup water
  5. Cover dough and keep side for 5 min
  6. Take Chakali making machine grease inside with oil, add dough, close chakali machine
  7. Now press machine slowly and make chakali by moving it around
  8. Heat oil for frying on low- medium heat
  9. Slowly drop chakali in oil, let it fry on low- medium heat till crunchy and golden in color
  10. Remove and drain excess oil
  11. Crispy, spicy Chakali ready

Tips

  1. Makes 5 cup of bhajani flour and 1 cup bhajani makes 12-11 Chakalis
  2. Air drying washed lentils and rice helps reduce roasting time
  3. Roast lentils and rice on low heat until crunchy, lentil and rice color shouldn’t change much
  4. Smooth fine bhajani flour is important
  5. Fry Chakali on low-medium heat to cook from inside and crispy from outside

How to serve

  1. Serve hot / cold
  2. Serve as tea time snack
  3. Store in airtight container
