Ingredients – Koftas
- पनीर / Paneer grated- 1 cup
- बटाटा / आलू / Potato boiled ans mashed – 1 cup
- िमरची / Green Chili fine cut – 1 tsp
- अदरक / Ginger – 1 tsp
- मीरे पूड/काली िमर्च/Pepper powder – 1/4 tsp
- कसूरी मेथी / Dried Methi leaves – 1/2 tsp
- मीठ / नमक / Salt – as per taste
- Condensed Milk – 1 tbsp
- Corn starch – 2 tbsp
- Crushed roasted cashew nuts – 1 tsp
- Mixed nuts and raisins stuffing
- Oil for frying
Making – Koftas
- Take grated paneer in mixing bowl and knead it to soft dough
- Add boiled crushed potato to bowl, mix well
- Add Chili, ginger, pepper powder, kasoori methi, salt to taste, mix well
- Add condensed milk, corn starch, mix everything together
- Add crushed roasted cashew nuts, mix well, kofta dough is ready!
- Grease palms, take lime size portion, make is flat, place little mixed nut and raising mix in middle and cover it with with dough from all sides
- Role between your palms to make it round
- Repeat for remaining Koftas
- Heat oil on medium, drop kofta in oil, fry till golden on all sides, turn occasionally
- Koftas are ready! set aside
Ingredients – Masala
- काजू / Cashew – 1/4 cup
- तेल / Oil – 1 tsp
- Butter – 1 tbsp
- जीर / जीरा / Cumin seeds – 1 tsp
- मोटी इलायची / Black Cardamom – 1
- दालचीनी / Cinnamon – 1/2 inch
- मीरे / काली िमर्च / Black peppers – 8
- लवंग / लौंग / Clove – 1
- इलायची / Cardamom – 2
- तमालपत्र/ तेज़पत्ता / Bayleaf – 1
- लसुन / लेहसुन / Garlic fine cut- 1 tbsp
- अदरक / Ginger – 1 inch
- कांदा / प्याज / Onion – 2 chopped
- मीठ / नमक / Salt – 1/2 tsp
- धने / धिनया / Coriander powder – 1 tsp
- हळद / हल्दी / Turmeric – 1/2 tsp
- टमाटर / Tomato cut – 2
- गरम मसाला / Garam Masala -1/2 tsp
Making – Masala
- Boil cashews in water for 2-3 min, remove and grind to fine puree and set aside
- Heat sauce pan on medium, add oil, butter, melt butter completely
- Add cumin seeds, black cardamom, cinnamon, black peppers, clove, cardamom, bayleaf, garlic, ginger, sauté for 1-2 min
- Add onion add little salt, cook till onion is soft
- Add coriander powder, turmeric, mix well
- Add Tomato, cook till tomato is soft
- Add garam masala, mix well, cook for 1-2 min
- Turn off heat, let it cool down
- Transfer to grinding jar, grind to very fine paste
- Now strain masala to get smooth masala puree, use little water to rinse, discard left over masala in strainer.
- Masala is ready!
Ingredients – Curry
- Butter – 1 tsp
- ितखट / लाल िमर्च / Chili powder -1 tsp
- Grinded masala
- मीठ / नमक / Salt – as per taste
- साखर / शक्कर / Sugar – 1 tsp
- Cashew puree
- Cream – 1 tbsp
- Fried Koftas
- कोथंबीर / धनिया पत्ता / Coriander for garnishing
Making – Curry
- Take a sauce pan, heat on medium
- Add butter, once butter melts, add chili powder, sauté for 30 sec
- Add masala puree, mix well, cook for 1-2 min
- Add salt, sugar mix well
- Add cashew puree, mix well, cook for 1-2 min
- Add cream, mix well
- Drop kofta in curry, garnish with coriander,
- Creamy Malai Kofta curry is ready!
How to serve
- Serve hot!
- Serve with Roti, Naan, Rice
Tips
- Straining masala gives gravy smooth texture
- Kneading paneer is important before making Koftas
- Fry kofta on medium to cook from inside
- Drop fried kofta in gravy just before serving to prevent it from getting soggy
