मलाई कोफ्ता | Malai Kofta

Ingredients Koftas

  • पनीर / Paneer grated- 1 cup
  • बटाटा / आलू / Potato boiled ans mashed – 1 cup
  • िमरची / Green Chili fine cut – 1 tsp
  • अदरक / Ginger – 1 tsp
  • मीरे पूड/काली िमर्च/Pepper powder – 1/4 tsp
  • कसूरी मेथी / Dried Methi leaves – 1/2 tsp
  • मीठ / नमक / Salt – as per taste
  • Condensed Milk – 1 tbsp
  • Corn starch – 2 tbsp
  • Crushed roasted cashew nuts – 1 tsp
  • Mixed nuts and raisins stuffing
  • Oil for frying

Making Koftas

  1. Take grated paneer in mixing bowl and knead it to soft dough
  2. Add boiled crushed potato to bowl, mix well
  3. Add Chili, ginger, pepper powder, kasoori methi, salt to taste, mix well
  4. Add condensed milk, corn starch, mix everything together
  5. Add crushed roasted cashew nuts, mix well, kofta dough is ready!
  6. Grease palms, take lime size portion, make is flat, place little mixed nut and raising mix in middle and cover it with with dough from all sides
  7. Role between your palms to make it round
  8. Repeat for remaining Koftas
  9. Heat oil on medium, drop kofta in oil, fry till golden on all sides, turn occasionally
  10. Koftas are ready! set aside

Ingredients Masala

  • काजू / Cashew – 1/4 cup
  • तेल / Oil – 1 tsp
  • Butter – 1 tbsp
  • जीर / जीरा / Cumin seeds – 1 tsp
  • मोटी इलायची / Black Cardamom – 1
  • दालचीनी / Cinnamon – 1/2 inch
  • मीरे / काली िमर्च / Black peppers – 8
  • लवंग / लौंग / Clove – 1
  • इलायची / Cardamom – 2
  • तमालपत्र/ तेज़पत्ता / Bayleaf – 1
  • लसुन / लेहसुन / Garlic fine cut- 1 tbsp
  • अदरक / Ginger – 1 inch
  • कांदा / प्याज / Onion – 2 chopped
  • मीठ / नमक / Salt – 1/2 tsp
  • धने / धिनया / Coriander powder – 1 tsp
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • टमाटर / Tomato cut – 2
  • गरम मसाला / Garam Masala -1/2 tsp

Making Masala

  1. Boil cashews in water for 2-3 min, remove and grind to fine puree and set aside
  2. Heat sauce pan on medium, add oil, butter, melt butter completely
  3. Add cumin seeds, black cardamom, cinnamon, black peppers, clove, cardamom, bayleaf, garlic, ginger, sauté for 1-2 min
  4. Add onion add little salt, cook till onion is soft
  5. Add coriander powder, turmeric, mix well
  6. Add Tomato, cook till tomato is soft
  7. Add garam masala, mix well, cook for 1-2 min
  8. Turn off heat, let it cool down
  9. Transfer to grinding jar, grind to very fine paste
  10. Now strain masala to get smooth masala puree, use little water to rinse, discard left over masala in strainer.
  11. Masala is ready!

Ingredients Curry

  • Butter – 1 tsp
  • ितखट / लाल िमर्च / Chili powder -1 tsp
  • Grinded masala
  • मीठ / नमक / Salt – as per taste
  • साखर / शक्कर / Sugar – 1 tsp
  • Cashew puree
  • Cream – 1 tbsp
  • Fried Koftas
  • कोथंबीर / धनिया  पत्ता / Coriander for garnishing

Making Curry

  1. Take a sauce pan, heat on medium
  2. Add butter, once butter melts, add chili powder, sauté for 30 sec
  3. Add masala puree, mix well, cook for 1-2 min
  4. Add salt, sugar mix well
  5. Add cashew puree, mix well, cook for 1-2 min
  6. Add cream, mix well
  7. Drop kofta in curry, garnish with coriander,
  8. Creamy Malai Kofta curry is ready!

How to serve

  1. Serve hot!
  2. Serve with Roti, Naan, Rice

Tips

  1. Straining masala gives gravy smooth texture
  2. Kneading paneer is important before making Koftas
  3. Fry kofta on medium to cook from inside
  4. Drop fried kofta in gravy just before serving to prevent it from getting soggy
