Ingredients Crispy Cajun Potato

  • बटाटा / आलू / Potato small – 8
  • मीठ / नमक / Salt – to taste
  • तिखट / लाल मिर्च / Chili powder – 1/2 tsp
  • मीरे पूड / काली मिर्च / Black peppers – 1/4 tsp
  • अनारदाना / Pomegranate powder – 1/4 tsp
  • आमचूर / Aamchoor powder – 1/4 tsp
  • लिंबू / नींबू / Lime juice – 1 tsp
  • Corn starch – 2-3 tsp
  • Oil for frying

Making Crispy Cajun potato

  1. Take pot, add water and salt, bring to boil
  2. Poke several holes in potatoes with a fork, add to boiling water, cook till soft
  3. Once cooked, remove from water, let it cool down
  4. Press each potato flat with smasher to make tikki like shape
  5. Take mixing bowl, add 1 tsp salt, chili powder, pepper powder, Aamchoor powder, pomegranate powder, lime juice mix well
  6. Add Corn starch, mix well, add little water to make slurry
  7. Apply this mix on pressed potatoes on both sides
  8. Heat oil for frying on medium, add potatoes fry till golden on both sides and remove
  9. Optional step: For more crispy potatoes
    1. Take 1-2 tsp of corn starch to left over mix, add little water to make more slurry
    2. Re-coat fried potatoes with slurry
    3. Refry till golden and crispy
  10. Repeat for all potatoes

Ingredients Sauce

  • Mayonnaise- 3 tbsp
  • Chili sauce – 1 tsp
  • Ketchup – 1 tsp

Making Sauce

  1. Take mixing bowl, add Mayonnaise, chili sauce, ketchup, mix well

Ingredients Serving

  • Fried potato
  • Sauce
  • कांदा / प्याज / Onion fine cut – 1 small
  • कोथंबीर /धिनया / Coriander fine cut

Instructions – Serving

  1. Take fried potatoes in a plate
  2. Top with Mayonnaise sauce,
  3. Add onion on top and garnish with coriander
  4. Crispy Cajun spice potatoes are ready!

Tips

  1. Oven baking or airfrying is alternative to frying
  2. Small potatoes are best suited for this dish, large potatoes can be used by cutting in small pieces
  3. Hung curd can be used as alternative to mayonnaise for making sauce
  4. Best for party snacks, starter menu
