Ingredients

  • दूध | Milk – 2 ltr 
  • लिंबू / नींबू / Lime juice – 2-3 tbsp
  • साखर / शक्कर / Sugar – 7 tbsp
  • Orange juice – 1/4 cup
  • Orange zest – 1/2 tsp
  • Pineapple juice – 1/4 cup
  • Blue berries – 1/4 cup
  • Rose Syrup – 1tbsp
  • इलायची / Cardamom powder – 1/2 tsp
  • Finely chopped mixed nuts – 2tbsp
  • Food color Orange and Yellow (optional) – 1 drop each

Preparation

  1. Bring milk to boil on medium heat, stir regularly to avoid sticking at bottom
  2. Once milk boils, add lemon juice and stir well
  3. Milk will start to curdle, continue to cook for 1-2 min, you will see water and milk solids separates completely. Turn off the heat
  4. Drain curdled milk using cheese / muslin cloth, you will be left with paneer / chenna
  5. Rinse the paneer with cold water, that will help with washing out lemon sourness and cooling paneer
  6. Collect all the edges of cloth together and squeeze out excess water from paneer
  7. Set aside for 25-30 min, to drain any leftover water
  8. Take the Paneer out on flat surface, the paneer would look scrambled and lumpy
  9. Knead paneer for 5-7 min, or until you will get soft and smooth paneer dough
  10. Divide paneer in four equal parts

Making Sandesh

Pineapple Syrup

  1. Heat pan on medium
  2. Add Pineapple juice, and 1 tbsp sugar, cook till it thicken and reduced to half
  3. Pineapple syrup is ready, let is cool down
  4. Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Pineapple syrup, a drop of yellow food color and pinch of cardamom powder
  5. Mix everything together throughly, paneer will become little loose with moisture
  6. Now put this Pineapple paneer mixture in pan and turn on heat
  7. Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
  8. Remove in plate, let it cool
  9. Divide that Pineapple paneer dough in small equal parts
  10. Take one part, roll in palms, make round and press on top of round little with thumb
  11. Garnish with finely chopped mixed nuts
  12. Pineapple Sandesh is ready

Orange Sandesh

  1. Heat pan on medium
  2. Add Orange juice, 1 tbsp sugar, 1/2 tsp orange zest and drop of Orange food color, cook till it thicken and reduced to half
  3. Orange syrup is ready, let it cool down
  4. Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Orange syrup and pinch of cardamom powder
  5. Mix everything together throughly, paneer will become little loose with moisture
  6. Now put this Orange paneer mixture in pan and turn on heat
  7. Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
  8. Remove in plate, let it cool
  9. Divide that Orange paneer dough in small equal parts
  10. Take one part, roll in palms, make round and press on top of round little with thumb
  11. Garnish with finely chopped mixed nuts
  12. Orange Sandesh is ready

Blueberry syrup

  1. Heat pan on medium
  2. Add Blueberry and 1 tbsp sugar, cook till it thickens and reduced to half
  3. Squeeze syrup and discard Blueberry peels, Blueberry syrup ready, let is cool
  4. Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Blueberry syrup and pinch of cardamom powder
  5. Mix everything together throughly, paneer will become little loose with moisture
  6. Now put this Blueberry paneer mixture in pan and turn on heat
  7. Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
  8. Remove in plate, let it cool
  9. Divide that Blueberry paneer dough in small equal parts
  10. Take one part, roll in palms, make round and press on top of round little with thumb
  11. Garnish with finely chopped mixed nuts
  12. Blueberry Sandesh is ready

Rose Sandesh

  1. Take one part of paneer, add 1 tbsp powdered sugar, 1/2 tbsp Rose syrup and pinch of cardamom powder
  2. Mix everything together throughly, paneer will become little loose with moisture
  3. Now put this Rose paneer mixture in pan and turn on heat
  4. Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
  5. Remove in plate, let it cool
  6. Divide that Rose paneer dough in small equal parts
  7. Take one part, roll in palms, make round and press on top of round little with thumb
  8. Garnish with finely chopped mixed nuts
  9. Rose Sandesh

Tips

  1. Drain excess water completely from paneer
  2. Cook paneer on low just enough to reduce syrup moisture and to thicken a little bit
  3. Don’t overcook flavored paneer, otherwise mixture will get crumbly and hard
  4. Remove blueberry peels from syrup, before adding to paneer

How to serve

  1. Refrigerate before serving
