Ingredients
- दूध | Milk – 2 ltr
- लिंबू / नींबू / Lime juice – 2-3 tbsp
- साखर / शक्कर / Sugar – 7 tbsp
- Orange juice – 1/4 cup
- Orange zest – 1/2 tsp
- Pineapple juice – 1/4 cup
- Blue berries – 1/4 cup
- Rose Syrup – 1tbsp
- इलायची / Cardamom powder – 1/2 tsp
- Finely chopped mixed nuts – 2tbsp
- Food color Orange and Yellow (optional) – 1 drop each
Preparation
- Bring milk to boil on medium heat, stir regularly to avoid sticking at bottom
- Once milk boils, add lemon juice and stir well
- Milk will start to curdle, continue to cook for 1-2 min, you will see water and milk solids separates completely. Turn off the heat
- Drain curdled milk using cheese / muslin cloth, you will be left with paneer / chenna
- Rinse the paneer with cold water, that will help with washing out lemon sourness and cooling paneer
- Collect all the edges of cloth together and squeeze out excess water from paneer
- Set aside for 25-30 min, to drain any leftover water
- Take the Paneer out on flat surface, the paneer would look scrambled and lumpy
- Knead paneer for 5-7 min, or until you will get soft and smooth paneer dough
- Divide paneer in four equal parts
Making Sandesh
Pineapple Syrup
- Heat pan on medium
- Add Pineapple juice, and 1 tbsp sugar, cook till it thicken and reduced to half
- Pineapple syrup is ready, let is cool down
- Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Pineapple syrup, a drop of yellow food color and pinch of cardamom powder
- Mix everything together throughly, paneer will become little loose with moisture
- Now put this Pineapple paneer mixture in pan and turn on heat
- Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
- Remove in plate, let it cool
- Divide that Pineapple paneer dough in small equal parts
- Take one part, roll in palms, make round and press on top of round little with thumb
- Garnish with finely chopped mixed nuts
- Pineapple Sandesh is ready
Orange Sandesh
- Heat pan on medium
- Add Orange juice, 1 tbsp sugar, 1/2 tsp orange zest and drop of Orange food color, cook till it thicken and reduced to half
- Orange syrup is ready, let it cool down
- Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Orange syrup and pinch of cardamom powder
- Mix everything together throughly, paneer will become little loose with moisture
- Now put this Orange paneer mixture in pan and turn on heat
- Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
- Remove in plate, let it cool
- Divide that Orange paneer dough in small equal parts
- Take one part, roll in palms, make round and press on top of round little with thumb
- Garnish with finely chopped mixed nuts
- Orange Sandesh is ready
Blueberry syrup
- Heat pan on medium
- Add Blueberry and 1 tbsp sugar, cook till it thickens and reduced to half
- Squeeze syrup and discard Blueberry peels, Blueberry syrup ready, let is cool
- Now take one part of paneer, add 1 tbsp powdered sugar, 1 tbsp Blueberry syrup and pinch of cardamom powder
- Mix everything together throughly, paneer will become little loose with moisture
- Now put this Blueberry paneer mixture in pan and turn on heat
- Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
- Remove in plate, let it cool
- Divide that Blueberry paneer dough in small equal parts
- Take one part, roll in palms, make round and press on top of round little with thumb
- Garnish with finely chopped mixed nuts
- Blueberry Sandesh is ready
Rose Sandesh
- Take one part of paneer, add 1 tbsp powdered sugar, 1/2 tbsp Rose syrup and pinch of cardamom powder
- Mix everything together throughly, paneer will become little loose with moisture
- Now put this Rose paneer mixture in pan and turn on heat
- Cook for 1-2 min on low heat, just to mixture get thicker like soft dough (Do not over cook otherwise paneer starts to loose water and gets hard)
- Remove in plate, let it cool
- Divide that Rose paneer dough in small equal parts
- Take one part, roll in palms, make round and press on top of round little with thumb
- Garnish with finely chopped mixed nuts
- Rose Sandesh
Tips
- Drain excess water completely from paneer
- Cook paneer on low just enough to reduce syrup moisture and to thicken a little bit
- Don’t overcook flavored paneer, otherwise mixture will get crumbly and hard
- Remove blueberry peels from syrup, before adding to paneer
How to serve
