Ingredients – Brinjal Masala
- तेल / Oil – 2 tbsp
- जीर / जीरा / Cumin seeds – 1/2 tsp
- लसुन / लेहसुन / Garlic – 4-5 chopped
- अदरक / Ginger paste – 1/2 tsp
- खोब्र / नािरयल / Desicated Coconut – 2 tbsp
- कांदा / प्याज / Onion – 1 chopped
- टमाटर / Tomato – 1 cut
- हळद / हल्दी / Turmeric – 1/2 tsp
- धने / धिनया / Coriander powder- 2 tsp
- तिखट / लाल मिर्च / Chilli powder – 2 tsp
- वांगी / बैंगन / Brinjal – 4-5 slit
- गरम मसाला / Garam Masala – 1 tsp
- Roasted शेंगदाने / मूंगफल्ली / Peanuts powder – 1/4 cup
- मीठ / नमक / Salt – as per taste
- Water – 1-2 cups
- कोथंबीर / धनिया पत्ता / Coriander for garnishing
Instructions
- Take pressure cooker, heat on medium
- Add oil, once oil heated add cumin seeds, garlic and ginger, sauté till garlic and ginger cooks
- Add desicated coconut, mix and sauté for half a minute
- Add onions, sauté till onion turns soft
- Add tomato, sauté till tomato softens
- Add turmeric, coriander powder, chili powder, mix well, sauté for 30 sec
- Add slit brinjal, mix well, add little water to combine all flavors
- Add Garam Masala, roasted peanut powder, mix well
- Add salt to taste, mix well
- Add 1 cup water, stir. Close cooker with lid, cook till 1 whistle
- Once cooker cools, open and garnish with coriander
- Brinjal Masala is ready!
How to serve
- Serve hot!
- Serve with Chapati, Roti, Naan
Tips
- Small brinjal are best suited for this recipe
- Slit brinjal, helps with brinjal absorbing flavors well
- Pressure cook untill only 1 whistle, and avoid overcooking
