Ingredients – Mutton Marination
- धने / धनिया / Coriander seeds – 2 tbsp
- मेथी दाना / Fenugreek – 1/4 tsp
- जीर / जीरा / Cumin seeds – 1 tsp
- बडीशेप/ सौंफ / Fennel – 1/2 tsp
- मटन / Mutton – 1 kg / 2 punds
- मीठ / नमक / Salt – 2 tsp /as per taste
- लसुन / लेहसुन / Garlic paste – 1 tsp
- अदरक / Ginger paste – 1 tsp
- दही / curd – 1/2 cup
Instruction – Mutton Marination
- Heat pan on low-medium, roast coriander seeds, fenugreek seeds, cumin seeds, fennel seeds together till aromatic
- Grind all seeds together to fine powder and set aside
- Take Mutton in bowl washed throughly
- Add salt to mutton
- Add roasted masala powder, prepared earlier
- Add garlic paste, ginger paste and curd to mutton
- Mix well, cover and keep aside for 25-30 min, this helps with enhancing meat flavor

- तेल / Oil – 3 tbsp
- दालचीनी / Cinnamon – 1 inch
- मोटी इलायची / Black Cardamom – 1
- इलायची / Cardamom – 2
- मीरे / काली मिर्च / Black peppers – 4
- लवंग / लौंग / Clove – 2
- तमालपत्र / तेज़पत्ता / Bayleaf
- कांदा / प्याज / Onion – 2 finely chopped
- Marinated mutton
- हळद / हल्दी / Turmeric – 1/2 tsp
- टमाटर / Tomato puree – 1.5 cup
- गरम मसाला / Garam Masala – 1/2 tsp
- तिखट / लाल मिर्च / Chilli powder – 2 tsp
- काजू / Cashew powder – 1 tbsp
- कोथंबीर / धनिया पत्ता / Coriander leaves
Instructions – Mutton Cooking
- Take heavy bottom pan, heat on medium
- Add oil to the pan, add all cinnamon, black cardamom, cardamom, black peppers, clove, bayleaf and roast for 1 min
- Add onion in the pan, salute till onion are soft
- Add marinated mutton to pan, mix well. Roast mutton in salt water for 10-12 min
- Add turmeric and mix well cook for 2-3 min, add tomato puree, mix well
- Add garam masala and chili powder, mix well. Cover and cook for 4-5 min
- Add cashew powder, add 1-2 cups of water depending on the desired gravy thickness
- Cover and cook till mutton is soft on medium heat, Mutton takes about 40-45 min to cook
- Garnish with cut coriander leaves
Tips
- Marination for 30-20 mins infuses nice taste in mutton
- Use heavy bottom pan for cooking mutton
- Mutton takes about 45 min to cook, add little water at a time during cooking if needed
How to serve
- Serve hot
- Serve with Roti, Naan, Rice
