रसरशित खानदेशी चिकन | Authentic Khandeshi Chicken recipe

Ingredients – Cooking Chicken

  • तेल / Oil – 1 tsp
  • कांदा / प्याज / Onion – 1 cut
  • हळद / हल्दी / Turmeric – 1 tsp
  • कोंबडी / मुर्गी / Chicken – 1/2 kg
  • मीठ / नमक / Salt – as per taste
  • पाणी / Water – 2 cups

Cooking Chicken

  1. Wash chicken throughly with water
  2. Add 1 tbsp curd and apply all over on chicken
  3. Heat cooker on medium heat
  4. Add oil and onion mix well cook for 1-2 min
  5. Add Turmeric, chicken and salt to it, mix well cover with plat and cook for 8-10 min
  6. Add 2 cups water mix well close cooker lid and pressure cook chicken until 1 witsel, turn of heat

Ingredients – Masala

  • धने / धनिया / Coriander powder – 2 tsp 
  • खोब्र / नािरयल / Dry Coconut grated -1/2 cup
  • बेसन / Gram flour – 1 tsp
  • कांदा / प्याज / Onion – 2 chopped
  • चिकन मसाला / Chicken Masala – 1 tsp
  • जीर / जीरा / Cumin seeds – 1 tsp
  • लसुन / लेहसुन / Garlic – 6-7 cloves
  • अदरक /Ginger – 1 inch
  • टमाटर / Tomato – 1 cut
  • कोथंबीर / धनिया / Coriander

Making Masala

  1. Heat pan on low to medium
  2. Add coriander seeds roast till aromatic and light brown in color remove in plate and keep aside
  3. Add besan and few drops of oil roast till brown in color, remove in plate
  4. Add coconut Roast till brown, remove in same plate and keep aside
  5. Add chopped onion in pan roast till brown in color, turn of heat, let it cool
  6. Take grinding jar, add all roasted masala, chicken masala, cumin seeds, garlic, ginger, tomato, coriander stem grind all together, if required add little water and grind smooth fine masala

Making Curry

  • Grinded Masala
  • तिखट / लाल मिर्च / Chilli powder – 2 tsp
  • तेल / Oil – 2 tbsp
  • मीठ / नमक / Salt – as per taste

Making Curry

  1. Heat deep pot on medium heat
  2. Add oil, once oil heats add grinded masala, roast it till oil separates, make sure masala will not burn to the bottom. Now add little water and cook masala till oil separates again
  3. Add Chili powder mix well cook for 2 minutes
  4. Add earlier cooked Chicken mix well, add more water if needed bring to boil and reduce heat to low, add salt and mix again
  5. Simmer gravy till oil rises on top
  6. Garnish with Coriander

Tips

  1. Applying curd to raw chicken before cooking gives nice flavor
  2. Grinding masala to fine paste gives nice thick gravy

How to serve

  1. Serve hot
  2. Serve with Bhakari, Chapati, Rice
