Cream of Mushroom soup

Ingredients – Soup

  • बटर / Butter – 1 tsp
  • मैदा / Maida flour – 2 tbsp
  • लसुन / लेहसुन / Garlic cut – 8-10 cloves
  • कांदा / प्याज / Onion – 1 chopped
  • मशरुम / Mushroom sliced – 500 gms
  • लिंबू/ नींबू / Lime juice – 1 tsp
  • दूध / Milk -1/2 cup
  • मीरे / काली मिर्च / Pepper powder – 1 tsp
  • ऑरेगैनो / Oragano – 1/4 tsp
  • मीठ / नमक / Salt – as per taste

Instruction – Soup

  1. Heat pan on low, add butter, let it melt
  2. Add Maida flour, sauté 2-3 min
  3. Add chopped garlic, sauté for 1 min,
  4. Add onion, and cook till it is soft
  5. Add mushroom to pan, add lime juice mix well, sauté till mushroom is cooked and soft
  6. Add little water and simmer for 2 min, turn off heat, let it cool down
  7. Grind cooked mushroom to fine puree
  8. Take a pan, heat on low-med, add mushroom puree, add 1-2 cups water, mix well
  9. Add milk mix well
  10. Add pepper powder, oregano, salt to taste, mix well.
  11. Simmer for 2-3 min, soup is ready!

Tips

  1. If desired keep some cooked mushroom pieces aside, you can add them later to the soup
  2. This soup tastes delicious even without cream, if desired you can add cream
  3. Cook mushroom completely before grinding to get nice taste and color

How to serve

  1. Serve hot
  2. Serve with toasted bread
