Ingredients – Paan mawa

  • खोबर / नारियल / Desicated coconut – 2 cups
  • दूध पावडर / Milk Powder – 1 cup
  • बडीशेप/ सौंफ / Fennel seeds- 1 tbsp
  • विड्याचे पान / Betel Leaf – 5-6 chopped
  • टूटी फ्रूटी / Tutti frutti – 1/4 cup
  • Mix nuts roasted and crushed – 1/4 cup
  • खजूर / Dates chopped fine – 2 tbsp
  • इलायची / Cardamom powder – 1/2 tsp
  • गुलकंद / Gulkand – 1/4 cup
  • कंडेंस्ड दूध/ Condensed milk – 5-6 tbsp

Step 1: Making Modak mixture

  1. Take mixing bowl, add Coconut, Milk powder, Fennel seeds to the bowl and mix well
  2. Add chopped Betel leaf, add Tutti-fruitti, Date, Cardamom to the bowl, mix well
  3. Add Gulkand and 2 tbsp of condensed milk, mix well, repeat again with 2 tbsp of condensed milk and If needed repeat again with 1-2 tbsp more condensed milk to get binding consistency. This process helps with even spread of sweetness for all mixture
  4. Modak mixture is ready

Step 2: Making Modak – Mold method

  1. Take small amount of mixture, fill mixture in the modak mold, press firmly to set the mixture firm in mold and avoid breaking when we open the mold
  2. Add more mix to the mold as needed to fill the mold completely, remove the modak from mold and our paan modak is ready
  3. Repeat the process for remaining modaks

Step 2: Making Modak – Hand method

  1. Take small amount of mixture, press firmly while rotating mixture in your palms to shape it as Modak
  2. You can carve modak design using a spoon, carve line on Modak moving spoons from bottom to top gently, repeat this for making design all around the modak,
  1. Modak is ready!
  2. Repeat the process for remaining modaks

Tips

  1. Condensed milk is mixed in batches to get even spread
  2. Refrigerate before serving, it gives that refreshing “Meetha Paan” taste
  3. Mix nut filling is made with almonds, pistachios, cashew, grated coconut
