Ingredients – Carrot mawa

  • तूप / घी / Ghee -1 tbsp
  • इलायची / Cardamom powder – 1/2 tsp
  • दूध पावडर / Milk Powder – 1/4 cups
  • दूध / Milk – 1/4 cup
  • Mix nuts roasted and crushed – 1/4 cup

Step 1: Making Dates Dough

  1. Make paste/crush dates using grinding jar
  2. Take pan, heat on low heat add mixed crushed nuts and couple drops of ghee. Roast them till nuts got nice crunch and aroma, remove in plate and keep aside
  3. In same pan add grated coconut and couple drops of ghee. Roast coconut till became light pinkish in color and aromatic, remove in plate and keep aside
  4. Now keep heat on low-medium, in same pan add ghee and date paste, mix well carefully because dates paste is quite sticky to mix with ghee. Keep roast dates paste in ghee for 4-5 mins
  5. Dates paste now starts to loose and became soft
  6. Add cardamom powder, mix well
  7. Add half of roasted crushed nuts, mix well
  8. Roast dates mixture for 2 more minutes and turn off heat, let the mixture cool in plate

Step 2: Making Modak

  1. Grease mold with ghee, take small amount of dates mixture, massage well with palms make it smooth and fill mixture in the modak mold now closed the mold
  2. Make hallow from down by passing finger inside of dates mixture and make thin layer of dates mixture around modak mold, remove excess mixture came out from mold
  3. Now fill the modak mold with remaining half roasted crushed nuts and roasted coconut
  4. Remove modak from mold, stuffed date modak is ready
  5. Repeat the process for remaining modaks
  6. Garnish tip of dates modak with little poppy seeds

Tips

  1. Roasting dates paste in ghee reduces dates stickiness and taste delicious(reduce quantity of ghee)
  2. These dates modaks are naturally sweet, healthy option
  3. ghee roasted nuts and coconut gives these modak bite
