Ingredients – Carrot mawa
- तूप / घी / Ghee -1 tbsp
- गाजर / Carrot grated – 4 cups
- साखर / शक्कर / Sugar – 1/2 cup
- इलायची / Cardamom powder – 1/2 tsp
- दूध पावडर / Milk Powder – 1/4 cups
- दूध / Milk – 1/4 cup
- Mix nuts roasted and crushed – 1/4 cup
Step 1: Making Carrot mawa
- Take a pan, heat on low-medium, add ghee
- Add grated carrot, use fine grater
- Roast carrot for 2-3 min, add sugar to the pan, mix well, cook till sugar is dissolved and absorbed by carrots
- Add cardmom powder to pan and mix well,
- Add milk powder, milk and crushed nuts to the pan, mix well and cook for additional 2-3 min
- Turn off heat, set aside, let it cook down
Ingredients – Green mawa
- तूप / घी / Ghee -1 tbsp
- दूध पावडर / Milk Powder – 1/2 cup
- दूध / Milk – 1/2 cup
- पिस्ता / pistachios Paste: Take 1/2 cup pistachios, shell out, grind them with 2 tbsp of milk to fine paste
Step 2: Making Green mawa
- Take a pan, heat on low-medium, add ghee
- Add milk powder, roast for 2 min on low-medium heat
- Add Milk, mix well, break any lumps that may form, continue to stir while cooking. Cook till mixture solidifies
- Add Pistachios paste to the mawa, mix well, this would give nice green color to mawa. Cook till mawa solidifies again
- Turn off heat, set aside, let it cool down.
Step 3: Making Modak
- Grease mold with ghee, take small amount of carrot mawa, massage, fill the mold. Close the mold, press firmly, add remove carrot mawa from mold to fill only about 80% mold.
- Take small portion of green mawa, make it smooth by rubbing it with your palms and fill the remaining 20% mold, press firmly, add/remove mawa to fill modak completely
- Remove modak from mold, carrot modak is ready
- Repeat the process for remaining modaks
Tips
- Decorate with Silver varak (optional)
- To balance sweetness of modak, no need to add sugar to green mawa
- Intead of green mawa, white mawa also works well with taste
