Ingredients – Cake

  • दही / Curd – 1/4 cup
  • साखर / शक्कर / Sugar – 1/4 cup
  • तेल / Oil – 1/4 cup
  • रवा / सूजी / Sooji – 1/4 cup
  • मैदा / Maida / White flour – 1 cup
  • बेकिंग सोडा / Baking Soda – 1/4 tsp
  • बेकिंग पाउडर / Baking Powder – 1/2 tsp
  • कोको पाउडर / Cocoa powder – 1/4 cup
  • दूध / Milk – 1/2 cup + 3 tbsp

Step 1: Making Cake

Preparing Cake batter

  1. Take mixing bowl, add curd, sugar and whisk well till sugar melts
  2. Add oil to the bowl and whisk
  3. Add Sooji to the bowl, whisk, cover and set aside the batter for 10 min
  4. After 10 min, sieve flour, baking soda, baking powder, cocoa powder together and add to the batter. Whisk well
  5. Add 1/4 cup milk and whisk batter until milk is mixed with batter
  6. Repeat the process with another 1/4 cup of milk
  7. Now add 3 tbsp milk with continuous whisking until you get the perfect cake batter
  8. Take cake metal tin / bowl, place butter/parchment paper at the bottom to avoid sticking the cake
  9. Pour batter to tin, spread evenly

Baking cake

  1. Take large pot with heavy base, which would fit the cake batter tin, add salt to the pot to cover whole bottom, salt helps with even cooking
  2. Place a metal stand /rack on salt
  3. Cover the pot and heat it for 10 min on low heat
  1. Now carefully place the cake batter tin in the this pot, cover and bake the cake for 45-50 min on low heat
  2. After about 45 min insert a small knife, toothpick in the cake to check if it is cooked, a completely baked cake would not have any batter sticking to the knife/toothpick
  1. Once cake is ready, demold after 5 min, remove the cake from pot, let it cook down completely before using for Modak

Step 2: Making Modak

Ingredients for Modal

  1. Crumbled cake – 2 cups
  2. खोबर / खोपरा / Desiccated Coconut – 1/2 cup
  3. Mix nuts crushed – 1/4 cup
  4. Condensed Milk – 3 tbsp
  5. Ghee for greasing modak mold

Molding Modak

  1. Take crumbled cake, add coconut, mix nuts, condensed milk and mix well
  2. Grease mold with ghee, close it and fill with prepared cake mixture,
  3. Press cake mix in mold, add more cake mixture if needed to fill the mold completely
  4. Remove the modak from the mold
  5. Repeat the steps for remaining modaks

Tips

  1. Whisk cake batter gently in one direction
  2. Cake is made lightly sweet as sweetness of modak is later balanced with condensed milk
  3. Mix nut can be made with almonds, pistachios, cashews
