Ingredients
- तूप / घी / Ghee – 2 tbsp
- खोबर / खोपरा / Desicated Coconut -2 cup
- दूध पावडर / Milk Powder – 1/3 cup
- दूध / Milk – 2/3 cup
- साखर / शक्कर / Sugar – 1 cup
- इलायची / Cardamom crushed – 1/4 tsp
- केसर Kesar – 8-10 strands
- पिस्ता / Pistachios crushed fine – 1/4 cup
- Food color – Kesar and Green (optional)
Instructions for Dough
- Take a pan, heat on low-medium heat, add ghee to the pan and let it melt
- Add desiccated coconut to the pan, roast for 2-3 min
- Add milk powder, mix well, roast for additional 1-2 min, stir continuously to avoid burning at bottom
- Add 1/3 cup milk (half of total milk) to the pan, mix well and cook till all the milk is absorbed
- Add Sugar to the pan, mix well, cook till sugar dissolves completely
- Add remaining milk to the pan, mix well, cook till milk is absorbed completely
- Add cardamom powder to the pan, mix well, turn off the heat
- Divide mixture in half. 1 half for Kesar side and another for Pista side
Instructions for Kesar Dough
- First prepare Kesar milk, add kesar to 2 tbsp of hot milk, mix and keep aside for 5-10 min, this will give time to bring out that beautiful Kesar color
- Heat pan on low-medium heat, take the half portion of mixture, add kesar milk to the pan, mix well to get the that uniform yellow color to dough
- You may add 1 drop of Kesar food color if needed, this is optional step
- Cook for 1-2 min, turn off heat, set aside the Kesar dough

Instructions for Pista Dough
- Lets first prepare Pista powder, remove pista shell and clean any brown layer, grind it to fine powder
- Now heat pan on low-medium heat, take remaining half portion of dough, add pista powder to the pan, mix well to get the that pista green color to dough
- You may add 1 drop of green food color if needed, this is optional step
- Cook for 1-2 min, turn off heat, set aside the Pista dough

Modak Molding
- After cooling massage dough with greased palms and make it smooth
- Now lightly grease modak mold from inside, take small portion of Kesar dough and fill half side of mold

- Repeat the process for pista dough and fill other half of mold

- Close the mold firmly, remove any excess dough from mold
- Remove the modak from mold, Kesar pista modak is ready.
- Repeat the process for remaining modaks
